The Best Gluten-Free Cookie Recipes
Is there anything better than a warm freshly baked cookie straight from the oven? It’s safe to say cookies are my love language. I’m over 10 years into running a baking blog, and I still can never get enough delicious cookie recipes in my life. At this point, I find myself baking up a batch every week to satisfy my cookie cravings! The best part? These cookie recipes are full of nutritious real-food ingredients, fiber, healthy fats, and free of refined sugar, eggs, and dairy!
I knew it was time to share the ultimate roundup combining my two favorite things: gluten-free baking and homemade cookies! Most of these cookies use easy-to-find gluten-free flours like almond flour, oat flour, or coconut flour. There are over 20 recipes featuring classic chocolate chip, snickerdoodles, and jammy thumbprints! All these cookie recipes are not only gluten-free, they’re also vegan, dairy-free, and refined sugar-free with tons of paleo options.
My best cookie tips:
- If chocolate is involved, make sure to use high-quality chocolate! I love using chocolate chunks instead of chips for ultimate meltiness.
- Chilling the dough will pretty much always help. It gives the flavor time to develop and helps the cookies hold their shape well. If you have time, it’s recommended!
- Cookie dough is so easy to freeze! I recommend scooping the cookie dough into balls, freezing until firm on a baking sheet, and then moving them to a zip bag for longer-term storage. Then you can have cookies on demand!

Description
These are the BEST Gluten-Free Chocolate Chip Cookies! No one guesses that these cookies are gluten-free, grain-free, paleo, and refined sugar-free! You can easily make the cookies vegan. Plus, more than 20 other gluten-free cookie recipes!
Ingredients
- ½ cup (100g) refined coconut oil, softened, similar in texture to softened butter, use refined coconut oil if you want no coconut flavor
- ⅔ cup (96g) coconut sugar
- 1 large egg or flax egg, room temperature or for vegan/to eat the dough, use a flax egg: mix 1 tablespoon flax meal + 2.5 tablespoons water and let gel for 10 minutes before using
- 1 teaspoon pure vanilla extract
- ½ teaspoon baking soda
- ½ teaspoon sea salt
- 2¼ cups (220g) blanched almond flour
- 1 cup (6 ounces) chopped dark chocolate, see Notes
- Flaky sea salt, to sprinkle on top, optional
Instructions
- Mix together the coconut oil and coconut sugar until smooth. Add the egg or flax egg and vanilla extract and stir until smooth.
- Add the almond flour, salt, and baking soda to the wet ingredients. Mix until well incorporated. Fold in the chopped chocolate.
- Cover and refrigerate for at least an hour (or up to 48 hours). You don’t NEED to refrigerate the dough if you don’t have time, but it’s recommended for the best flavor and texture.
- When you’re ready to bake, preheat the oven to 350ºF. Use a cookie scoop (using this size will give you 12 cookies, using this smaller size will give you about 20) to form cookies and place on a parchment-lined baking sheet; press down slightly. Sprinkle with flaky sea salt if desired. Bake for about 10 or until just beginning to turn golden brown around the edges.
- Store leftover cookies in an airtight container at room temperature or in the refrigerator up to 3 days.
Notes
For the flax egg, combine 1.5 tablespoons flax meal + 4 tablespoons water in a small bowl. Whisk and let set for 10 minutes, until thickened. If you prefer, you can use a regular egg + one egg yolk.

What kind or brand of chocolate chunks do you use in this recipe?
Hi Nicole! I typically use a chopped chocolate bar for chocolate chunks. I tend to favor brands that sweeten with coconut sugar, like Hu Kitchen, Dr Bronner Chocolate, or Evolved Chocolate, but any of your favorite chocolates will work. For chips, I love Santa Barbara Chocolate Chips!

can I sub maple syrup for the sugar, and if so, how much? xo
Hi Erica, no I wouldn’t recommend ever substituting maple syrup for granulated sugar because it changes the consistency of the cookie by throwing off the wet:dry ratio. Hope this makes sense!
