ingredients you’ll need —
1 small yellow onion, sliced
8 oz. sliced mushrooms
4 garlic cloves, minced
1/2 teaspoon dried thyme
1 tablespoon starch of choice
1 cup vegetable broth
1 cup dairy-free milk (I like soy for extra protein)
1 (15 oz) can cannelini beans, or other white beans of choice, drained and rinsed
2 cups baby greens, like baby arugula or spinach
1 tablespoon tamari or soy sauce
1 lemon, juiced
Salt and pepper, to taste
¼ cup fresh basil, sliced, to garnish

RECIPE BELOW 👇🍪🍌 my mom taught me this banana oatmeal cookie recipe earlier this summer and I’ve been making it almost weekly ever since! it’s so simple and delicious — we’ve been loving them as a hiking trail snack. like a granola bar, but in cookie form!

INGREDIENTS
• 2 ripe bananas, mashed
• 1/2 teaspoon each vanilla extract & cinnamon
• 2 tablespoons nut or seed butter, optional, for extra chewiness
• 1.5 cups oats (I prefer quick cooking but rolled works too, which is what I used in the video)
• 1/2 cup each chocolate chips & blueberries (I always use frozen, you can use all of one or the other)

mix together the bananas, vanilla, cinnamon, and nut butter if you’re using. stir in the oats, blueberries & chocolate chips.
scoop onto a baking sheet and press down slightly (form them into cookie shapes if needed).
bake for 10 to 12 minutes at 325°F or until firm to the touch. enjoy!!!
