Let’s talk about these glorious paleo double chocolate cookies you’re looking at. You guys know I’m a cookie girl – I make these paleo chocolate chip cookies almost every week and I still always want to try out new, delicious cookie recipes.
These gluten-free double chocolate cookies are definitely in the rotation now. They’re the perfect, extra chocolatey version of my go-to favorite.
These cookies are ULTRA chocolatey and fudgy, just the way a double chocolate cookie should be. The big chocolate chunks definitely help out in that department. They’re naturally flourless, made with just cocoa powder to hold it all together. They’re also refined sugar-free since they’re sweetened with coconut sugar.
A sprinkle of flaky sea salt adds that salty/sweet combo that I love. But the salt is a personal preference so if salty sweet isn’t your jam, skip it.

If you want thick cookies, place dough in the freezer for 15 minutes before baking.

You can place the cookie dough in the fridge for up to 3 days before baking. You can either place it in the fridge in a bowl or scoop out the cookies individually and refrigerate them in cookie dough balls.

These Gluten-Free Double Chocolate Ginger Cookies are incredibly fudgy and flavored with powdered ginger and chewy pieces of crystallized ginger. They have a soft, gooey center and crisp edges.

Paleo Double Chocolate Brownie Cookies
Ingredients
- ½ cup coconut oil, solid at room temperature, similar to softened butter
- ¾ cup coconut sugar
- 1 egg, room temperature
- 1 teaspoon vanilla extract
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 cup cocoa powder
- 1 cup semi-sweet chocolate chunks, make sure they’re dairy-free or make your own
- Flaky sea salt, optional
Instructions
- Preheat oven to 350ºF.
- Thoroughly mix together the coconut oil and coconut sugar until completely combined. Add the egg and vanilla and stir until combined.
- Add in the baking soda, salt, and cocoa powder and mix until smooth. Stir in the chocolate chunks. Use a cookie scoop to shape cookie dough balls. Sprinkle with flaky sea salt, if desired.
- If you want thick cookies, place dough in the freezer for 15 minutes before baking. You can also place the cookie dough in the fridge for up to 3 days before baking.
- Bake for about 10 minutes or until set around the edges but still gooey in the center. Let cool for 15 minutes on the baking sheet before transferring to a cooling rack to cool completely.

How many does one recipe make?
It depends on how large your cookies are, but if I remember correctly, I got about 16 or 18 out of this recipe.
I tried making these cookies and they spread all over :( They were still delicious but do you have any tips for keeping them from spreading? I even froze the dough before baking
Hi Jessie! I’m sorry you had trouble. It’s hard to say what went wrong without being in the kitchen with you. I’ve never had trouble with these spreading too much – was the coconut oil solid? If you can give me some more details, I can try to help you figure it out!
This recipe doesn’t list any form of flour. I baked these cookies exactly to the recipe (finding the lack of flour suspicious, but proceeding anyway). I made small cookies decently spaced out, but when I took them out of the oven they were strangely textured (but still yummy) cookie bars.
I have a feeling it’s a typo.
Also, these cookies taste strongly of coconut. So expect them to be Coconut Chocolate cookies. Not just chocolate cookies with coconut oil in them.
I stirred in some psyllium powder and actual coconut into the second half of my batch in hopes of more structure. It gave a little bit, but not a lot. I think if I’d added more I could’be gotten it right.
Hi Carol. I’m sorry you had trouble with this recipe. Actually, these cookies are intentionally flourless. I’m not sure what happened and it’s hard to tell without being in the kitchen with you, but I’ve made this recipe a number of times and they’ve always turned out as pictured. Are you sure your coconut oil was solid? That can make the cookies spread a lot. If you want less of a coconut flavor, try using refined coconut oil – it doesn’t have any flavor.
Hi I tried these and the mixture was so dry that I had to mix and roll it by hand. The finished product also did not spread and looks good, but crumbles on bite. Is there a missing liquid ingredient? Thanks
Hi June, how odd. Are you sure you used enough coconut oil and included the egg? Or is it possible you over-measured the cocoa powder? If you packed it into the measuring cup, it could’ve made the cookies too dry. Sorry you had trouble!

I actually tried again but doubled the recipe, this time they actually spread all over the place :) I am going to try again just one recipe and measure more carefully, I find it hard to measure the coconut oil properly when it is firm as I have to scrape it out with a spoon, any recommendations?
I had the same problem, right after I put in the cocoa powder as the final ingredient, there was no way it was going to come out “smooth”. It was more crumbly so I had to roll them into balls with my hand. I did the “put them in the freezer for 15 minutes”, but they ended up staying in balls and only the outside got softer/cooked so I had to put them in longer. I used all measuring cups and measuring spoons so I don’t think the portions were off, but seemed like it needed more liquid or another egg or something.
Hi Courtney, sorry you had issues! Could it have been that too much cocoa powder was added? Cocoa powder should always been spooned into the measuring cup and then leveled off, or it’s easy to pack too much into the cup, causing a dry product.

Not really Paleo. They contain eggs, and they are NOT free of refined sugar. Look at the ingredients on the chocolate chips.
Hi Anna, eggs are in fact paleo, and I encourage using refined sugar free chocolate, either bought or from making your own. With that adaptation, they are indeed paleo-friendly.
If I use regular AP flour and regular sugar would they come out the same?
