Let’s talk about these glorious paleo double chocolate cookies you’re looking at. You guys know I’m a cookie girl – I make these paleo chocolate chip cookies almost every week and I still always want to try out new, delicious cookie recipes.
These gluten-free double chocolate cookies are definitely in the rotation now. They’re the perfect, extra chocolatey version of my go-to favorite.
These cookies are ULTRA chocolatey and fudgy, just the way a double chocolate cookie should be. The big chocolate chunks definitely help out in that department. They’re naturally flourless, made with just cocoa powder to hold it all together. They’re also refined sugar-free since they’re sweetened with coconut sugar.
A sprinkle of flaky sea salt adds that salty/sweet combo that I love. But the salt is a personal preference so if salty sweet isn’t your jam, skip it.

If you want thick cookies, place dough in the freezer for 15 minutes before baking.

You can place the cookie dough in the fridge for up to 3 days before baking. You can either place it in the fridge in a bowl or scoop out the cookies individually and refrigerate them in cookie dough balls.

These Gluten-Free Double Chocolate Ginger Cookies are incredibly fudgy and flavored with powdered ginger and chewy pieces of crystallized ginger. They have a soft, gooey center and crisp edges.

Paleo Double Chocolate Brownie Cookies
Ingredients
- ½ cup coconut oil, solid at room temperature, similar to softened butter
- ¾ cup coconut sugar
- 1 egg, room temperature
- 1 teaspoon vanilla extract
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 cup cocoa powder
- 1 cup semi-sweet chocolate chunks, make sure they’re dairy-free or make your own
- Flaky sea salt, optional
Instructions
- Preheat oven to 350ºF.
- Thoroughly mix together the coconut oil and coconut sugar until completely combined. Add the egg and vanilla and stir until combined.
- Add in the baking soda, salt, and cocoa powder and mix until smooth. Stir in the chocolate chunks. Use a cookie scoop to shape cookie dough balls. Sprinkle with flaky sea salt, if desired.
- If you want thick cookies, place dough in the freezer for 15 minutes before baking. You can also place the cookie dough in the fridge for up to 3 days before baking.
- Bake for about 10 minutes or until set around the edges but still gooey in the center. Let cool for 15 minutes on the baking sheet before transferring to a cooling rack to cool completely.



wondering if I could substitute honey for the coconut sugar? if, so would it be an equal equivalent?
Hi Ann, it would change the recipe since it would be adding a liquid to the dough, which would change the consistency of the dough and the cookies. You’d likely have to add more flour, but since I didn’t develop the cookies that way, I’m not sure how much.
These are my absolute favorite cookies of any I have ever made. I have made them at least 10 times and they flatten out every single time. I have followed the recipe exactly except I double it. I have froze them as balls for 2 hours, I have refrigerated them also. I keep trying everything to stop them from flattening. I obviously keep them refrigerated after they cool down. They are so darn good so please help me have a thick cookie not a paper thin cookie. I make sure the coconut oil is solid at room temperature, I spoon in the cocoa powder. I double the recipe every time could that be it? Any ideas?????
Hi! I’m so glad you’re loving the cookies, but I’m sorry you’re having issues when them spreading too much. Doubling it shouldn’t impact it, but maybe try using a little bit less oil or a little bit more cocoa powder. Either will adjust the ratio a little bit, and allow the cookies to stay thick instead of spreading. Enjoy!!
I added a scoop of Ideal lean chocolate brownie protein powder in place of part of the cocoa powder, they were amazing!!

Fabulous. But be sure to NOT use a different oil. I did the first time and they are much easier to work with when using coconut oil!

I’ve made this recipe about three times so far and have either doubled or tripled it. Each time I think I did something wrong, but regardless of my doing that, this is still my family’s favorite cookie recipe! I just made them for the fourth time, and I think I finally got it right, though I didn’t use solid coconut oil… I only had the bottled liquid form in my house. They still turned out great! I love that there’s no flour—just chocolate, chocolate and MORE chocolate!!

Dang, why did I ever doubt you? I was suspicious of this recipe (no almond flour or anything at all?? How could that possibly WORK??) but these babies deliver in a HUGE way! I subbed butter for coconut oil, (we’re not dairy-free) and maple sugar for coconut (just what I had this week) and I definitely used the freezer ahead of baking, and they came out astonishingly amazing. Melt in your mouth perfection, literally. Thanks so much for this unusual winner!
