Let’s talk about these glorious paleo double chocolate cookies you’re looking at. You guys know I’m a cookie girl – I make these paleo chocolate chip cookies almost every week and I still always want to try out new, delicious cookie recipes.
These gluten-free double chocolate cookies are definitely in the rotation now. They’re the perfect, extra chocolatey version of my go-to favorite.
These cookies are ULTRA chocolatey and fudgy, just the way a double chocolate cookie should be. The big chocolate chunks definitely help out in that department. They’re naturally flourless, made with just cocoa powder to hold it all together. They’re also refined sugar-free since they’re sweetened with coconut sugar.
A sprinkle of flaky sea salt adds that salty/sweet combo that I love. But the salt is a personal preference so if salty sweet isn’t your jam, skip it.

If you want thick cookies, place dough in the freezer for 15 minutes before baking.

You can place the cookie dough in the fridge for up to 3 days before baking. You can either place it in the fridge in a bowl or scoop out the cookies individually and refrigerate them in cookie dough balls.

These Double Chocolate Hazelnut Cookies are soft, fudgy, and incredibly chocolatey! These irresistible cookies are loaded with melty dark chocolate chunks and crunchy hazelnuts, and you’d never guess they’re gluten-free, paleo, and vegan.
Gluten-Free Chocolate Ginger Cookies
These Gluten-Free Double Chocolate Ginger Cookies are incredibly fudgy and flavored with powdered ginger and chewy pieces of crystallized ginger. They have a soft, gooey center and crisp edges.

Paleo Double Chocolate Brownie Cookies
Ingredients
- ½ cup coconut oil, solid at room temperature, similar to softened butter
- ¾ cup coconut sugar
- 1 egg, room temperature
- 1 teaspoon vanilla extract
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 cup cocoa powder
- 1 cup semi-sweet chocolate chunks, make sure they’re dairy-free or make your own
- Flaky sea salt, optional
Instructions
- Preheat oven to 350ºF.
- Thoroughly mix together the coconut oil and coconut sugar until completely combined. Add the egg and vanilla and stir until combined.
- Add in the baking soda, salt, and cocoa powder and mix until smooth. Stir in the chocolate chunks. Use a cookie scoop to shape cookie dough balls. Sprinkle with flaky sea salt, if desired.
- If you want thick cookies, place dough in the freezer for 15 minutes before baking. You can also place the cookie dough in the fridge for up to 3 days before baking.
- Bake for about 10 minutes or until set around the edges but still gooey in the center. Let cool for 15 minutes on the baking sheet before transferring to a cooling rack to cool completely.
