A note on flours: gluten-free muffins behave very differently depending on which flour you use, so I don’t recommend swapping flours between recipes without testing. The recipes here use a range of bases. Some call for oat and almond flour, others use coconut flour. Each one is developed specifically for the listed flour, which gives them their texture. Stick with the recommended flour for the best results.

A few tips for the BEST gluten-free muffins:

  • Check your leaveners. Old baking soda and baking powder are the most common culprits behind flat muffins. If yours have been in the cabinet for a while, it’s worth testing or replacing them.
