Remember these Oatmeal Chocolate Chip Cookie Dough Bites I shared a couple posts back? Pretty much as soon as I shared them, a bunch of you guys made them and shared your raves with me – they’re sooo good and it always makes me so happy to hear that you guys agree.
Mine disappeared QUICK, so I decided a new batch was in order. But if you know me, you know it’s rare I make something the same way twice (and if I do, you know it’s gotta be good 😉) so I thought…why not put a little twist on these?!
Since we’ve got Valentine’s Day coming up next week, a red velvet version sounded like a delicious idea. Red velvet is a flavor I don’t mess around with too often because it’s normally chock-full of weird artificial food colorings which I’m so not down with.
Luckily, I use a special ingredient here to get the red velvet color without needing to use any red food coloring. In fact, the red color actually gives a superfood nutrient boost, instead of adding carcinogens like regular red food coloring. Have you guessed the ingredient yet?!
If you guessed beet powder, you’d be right! A couple of tablespoons of the red beet powder, along with a tablespoon of cacao powder, transforms these cookie dough bites into Valentine’s Day-ready red velvet goodness!
The beet powder doesn’t only provide the color, but it also adds a whole host of nutritional benefits – it contains vitamins A, B6, and C, magnesium, iron, folate, potassium, iron, calcium, and antioxidants. It can help with blood pressure, circulation, and energy (source). As if you needed any more reasons to eat more red velvet cookie dough bites!
The rest of the ingredients are pretty straightforward! First, you need some nut butter. I like cashew butter because it provides a pretty mild, buttery flavor, but you can certainly use almond butter instead. A few tablespoons of maple syrup are used to sweeten and help hold everything together.
Then some almond flour, sea salt, and vanilla extract are added, along with the cacao powder and beet powder. Finally, some chocolate chips are stirred in! Then you just roll the dough into balls and voila – you’re done. Aren’t easy recipes the best?!

They’ve got a sweet, buttery flavor with a hint of chocolate from the cacao powder and some crunch from the chocolate chips. Ingredients
- ½ cup (128g) cashew butter, can also use almond butter
- 3 tablespoons maple syrup
- 1 cup (72g) blanched almond flour
- 1 tablespoon cacao powder
- 2 tablespoons red beet powder, I used MRM Superfoods
- ¼ teaspoon kosher sea salt
- ½ teaspoon vanilla extract
- ⅓ cup chocolate chips, I used Enjoy Life brand
Instructions
- In a mixing bowl, stir together the cashew butter and maple syrup. Stir in the almond flour, cacao powder, red beet powder, salt, vanilla extract, and chocolate chips.
- Roll the dough into 12 balls and store in an airtight container in the refrigerator for up to 2 weeks.
Yum! I need to get me some beet powder ASAP so I can make red velvet versions of everything ;) So many possibilities and gotta love the nutritional boost!
If I use coconut flour, should I reduce the amount?
Yes definitely, since coconut flour is so much more absorbent than almond flour – I’d start with about 1/3 cup and add in teaspoon amounts after that to reach your desired consistency. Enjoy!
