- 1 medium red onion
- 1 lemon, juiced
- 1 tablespoon sumac
- 1/2 teaspoon salt
- 1/4 cup fresh parsley
- 2 tablespoons olive oil, optional, for extra richness
Instructions
- Slice the red onion super thin (a mandoline works great if you have one, or slice by hand).
- Place in a bowl and add the lemon, sumac, salt, parsley, and olive oil, if using. Toss together to combine and coat the onions.
- Let rest for 10 minutes at room temperature to soften before serving.
- They can be used immediately or stored in an airtight container in the refrigerator for up to a week.
