Strawberry Banana Muffins
These Strawberry Banana Muffins are the perfect on-the-go snack or breakfast! Greek yogurt and bananas keep these muffins super moist, and strawberries make them fruity and super flavorful.
I keep feeling like I’m finally going be settled, but it’s taking a lot longer than expected. Having a messy, unpacked house is not good for my focus, and I just need to organize the whole darn apartment before I can truly focus.
Thankfully, I’m starting to get there! I finally have a desk (actually DIY drawers + kitchen countertop + table legs = desk/photography area) and it has allowed me to put so much stuff that had sat, sadly on my floor, waiting for a home. Having floor space is a novelty I haven’t had yet in the apartment! I’m relishing in the final box being gone from my room.
Less clutter means more focus for baking, blogging, writing, and all the other good stuff. Though baked goods have been sporadic in my new apartment, these Strawberry Banana Muffins are infinitely better than the last batch I tried.
The Strawberry Banana flavor combination immediately reminds me of childhood. My dad always made my sister and I strawberry banana smoothies, and they were my favorite! Recreating those homey, summery flavors in a soft, sweet, moist muffin seemed only natural.
Let’s make Strawberry Banana Muffins!
These Strawberry Banana Muffins get moisture from many places. First, anything with bananas is gonna be soft and sweet. That’s only ramped up by a bit of vegetable oil and Greek yogurt (I used strawberry flavor). This trio of ingredients will result in super tender muffins!
To add a bit of heartiness, I added in some oatmeal. It adds a nice texture and some whole grains to the mix, which make these perfect for breakfast. Best of all? These come together in less than 10 minutes, so you will be enjoying fresh muffins in less than 45 minutes. They also make your house smell delicious – baking is always the best thing to do in a new apartment :)
Can you freeze muffins?
Yes, absolutely! I recommend sealing them in a zip bag with as much air as possible removed. Use a vacuum sealer if you have one for the most freshness. They’ll keep well in the freezer for at least three months.
Strawberries are one of my favorites to bake with, and I could eat tons of them on their own. Strawberries give these muffins such a delicious burst of fruity flavor to these muffins. Prepare for them to be devoured by any strawberry lovers around. I hope you love them!

Description
These Strawberry Banana Muffins are the perfect on-the-go snack or breakfast! Greek yogurt and bananas keep these muffins super moist, and strawberries make them fruity and super flavorful.
Ingredients
- 1 cup all-purpose flour
- ¼ cup whole wheat flour
- ½ cup rolled oats
- ½ cup light brown sugar
- ¼ cup granulated sugar
- ½ teaspoon salt
- 2 teaspoons baking powder
- ½ teaspoon baking soda
- ¼ cup vegetable oil
- ½ cup mashed bananas, about 2 small or 1 large
- ½ cup Greek yogurt, I used strawberry flavor
- 1 cup strawberries, diced
Instructions
- Preheat oven to 375ºF. Grease muffin cups or line with muffin liners.
- Whisk together flours, oats, brown sugar, white sugar, salt and baking powder in a mixing bowl. In a separate bowl, whisk together vegetable oil, mashed bananas, and yogurt. Add to the dry ingredients. Stir until just moistened. Fold in chopped strawberries. Fill muffin cups ¾ full.
- Bake for about 18 minutes in the preheated oven, or until a toothpick comes out clean.

I am such a maniac when I move. I cannot relax until EVERYTHING is put away. Which means I am unpacking for like 3 days straight. But I’d rather just get it all done as soon as possible. Came out super yummy, I put an egg in them because…chickens and I did 1/2 cup white granulated for sugar (still a bit sweet for my tastes) next time I’ll do 1/4 cup total sugar. Subbed olive oil and used all regular flour…came out so good will definitely make again, kids loved em!
