Ingredients

  • 1 cup all-purpose flour
  • ¼ cup whole wheat flour
  • ½ cup rolled oats
  • ½ cup light brown sugar
  • ¼ cup granulated sugar
  • ½ teaspoon salt
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ¼ cup vegetable oil
  • ½ cup mashed bananas about 2 small or 1 large
  • ½ cup Greek yogurt I used strawberry flavor
  • 1 cup strawberries diced

Instructions

  • Preheat oven to 375ºF. Grease muffin cups or line with muffin liners.
  • Whisk together flours, oats, brown sugar, white sugar, salt and baking powder in a mixing bowl. In a separate bowl, whisk together vegetable oil, mashed bananas, and yogurt. Add to the dry ingredients. Stir until just moistened. Fold in chopped strawberries. Fill muffin cups ¾ full.
  • Bake for about 18 minutes in the preheated oven, or until a toothpick comes out clean.
