What do I need to make Healthy Pumpkin Spice Snack Mix?
- Pecans: I love protein-packed pecans and their buttery texture in this recipe, but you can substitute the pecans with your favorite nuts or seeds if you prefer.
- Pretzels: gluten-free vegan pretzels over here, of course! These are so crunchy and wonderful in this recipe.
- Corn Flakes: these are the best crunchy little bits in the mix and I recommend including them if you have them around. You could substitute with a different cereal if preferred.
- Maple Syrup: I love the maple syrup flavor here, but you can also use honey, or a combination of the two if you prefer.
- Coconut Oil: this helps us get a super crispy snack mix. I recommend using refined coconut oil here to get rid of the coconut flavor.
- Pumpkin Pie Spice: a mix of cinnamon, nutmeg, and ginger, this makes this taste SO warm and delicious.
- Dried Cranberries: I make sure to always use apple juice-sweetened dried cranberries to get rid of any refined sugars. You can leave these out if preferred, or replace them with chocolate chips for a more decadent snack mix!
What’s really wonderful is that you can switch out the crunchy ingredients to whatever you want. Any nuts will work here, or seeds, or other cereals and crunchy snacks. This is a great clean-out-the-pantry recipe to use up the odds and ends that you have.

Description
This Healthy Pumpkin Spice Snack Mix is crunchy, sweet, and SO easy to make with just seven ingredients! It’s perfect for snacking on, using as a crunchy topping, or giving as a gift.
Ingredients
- 2 cups pecan halves
- 2 cups pretzels, I use GF vegan pretzels
- 2 cups cornflakes
- ¼ cup vegan butter or coconut oil, melted
- ¼ cup maple syrup
- 1 tbsp pumpkin pie spice
- ½ cup apple-juice sweetened dried cranberries
Instructions
- Preheat the oven to 275°F.
- Combine the pecans, pretzels, and cornflakes in a bowl.
- In another bowl or measuring cup, whisk together the melted oil or butter, maple syrup, and pumpkin pie spice.
- Pour over the dry ingredients and stir to combine.
- Spread on a baking sheet and bake for 45 minutes, stirring every 15 minutes, until it’s crispy and dry. Toss in the cranberries, and enjoy! Keep stored in a sealed container.

This sounds wonderful! Can you sub with unsalted butter or salted butter instead of vegan butter or coconut oil?
