What do I need to make Healthy Pumpkin Spice Snack Mix?

  • Pecans: I love the protein-packed pecans and their buttery texture in this recipe, but you can substitute them with your favorite nuts or seeds if you prefer.
  • Pretzels: gluten-free vegan pretzels over here, of course!
  • Corn Flakes: These are the best crunchy little bits in the mix, and I recommend including them if you have them around. You can substitute a different cereal if preferred, such as Chex, for a more classic Chex Mix-style snack mix.
  • Maple Syrup: Alternatively, you can use honey, agave, or a combination if you prefer.
  • Coconut Oil: This helps us get a super crispy snack mix. I recommend using refined coconut oil here to avoid coconut flavor.
  • Pumpkin Pie Spice: a mix of cinnamon, nutmeg, and ginger.
  • Dried Cranberries: I always use apple juice-sweetened dried cranberries to eliminate any refined sugars. You can leave these out if preferred, or replace them with chocolate chips for a more decadent snack mix!
