Ingredients

  • 2 cups pecan halves
  • 2 cups pretzels I use GF vegan pretzels
  • 2 cups cornflakes or corn Chex
  • ¼ cup vegan butter or coconut oil, melted
  • ¼ cup maple syrup
  • 1 tbsp pumpkin pie spice
  • ½ cup apple-juice sweetened dried cranberries

Instructions

  • Preheat your oven to 275°F and line a large baking sheet with parchment paper.
  • Combine the dry ingredients: In a large bowl, mix pecans, pretzels, and corn flakes.

  • Make the coating: In a small saucepan (or a microwave-safe bowl), melt the coconut oil, maple syrup, and pumpkin pie spice. Stir until smooth and fragrant.
    ¼ cup vegan butter, ¼ cup maple syrup, 1 tbsp pumpkin pie spice
  • Toss to coat: Pour the syrup mixture over the dry ingredients and stir well to coat everything evenly.
  • Bake until golden: Spread the mixture into an even layer onto the pan or baking sheet and bake for 45 minutes, stirring every 15 minutes, until crisp and lightly golden.
  • Add the mix-ins: Remove the mixture from the oven, let it cool completely, then stir in the dried cranberries (or chocolate chips, once cooled).
    ½ cup apple-juice sweetened dried cranberries
  • Store or gift: Keep in an airtight jar at room temperature for up to 2 weeks.
