Make the coating: In a small saucepan (or a microwave-safe bowl), melt the coconut oil, maple syrup, and pumpkin pie spice. Stir until smooth and fragrant.
¼ cup vegan butter, ¼ cup maple syrup, 1 tbsp pumpkin pie spice
Toss to coat: Pour the syrup mixture over the dry ingredients and stir well to coat everything evenly.
Bake until golden: Spread the mixture into an even layer onto the pan or baking sheet and bake for 45 minutes, stirring every 15 minutes, until crisp and lightly golden.
