Description

These Easy Peanut Butter Oatmeal Bites take just five minutes to make and are the perfect super easy snack! Made with just seven ingredients, these peanut butter bites are super customizable, gluten-free, vegan, and absolutely delicious.


Ingredients

Scale
  • ½ cup (128g) peanut butter or nut/seed butter of choice
  • 3 tablespoons (63gmaple syrup or honey
  • ½ cup (48ggluten-free rolled oats
  • ⅓ cup (40g) gluten-free oat flour or ½ cup (48g) almond flour
  • ½ teaspoon vanilla extract
  • ¼ teaspoon cinnamon
  • ¼ teaspoon salt, use half if your nut butter is salted

Instructions

  1. In a small mixing bowl, combine all of the ingredients and stir to combine thoroughly. Taste and adjust with more vanilla/cinnamon/salt if desired.
  2. Scoop into balls (I used this small OXO cookie scoop) and then roll in between your palms to smooth out the dough balls.
  3. Eat immediately, or store in an airtight container in the fridge.
