These Easy Peanut Butter Oatmeal Bites take just five minutes to make and are the perfect super easy snack! Made with just seven ingredients, these peanut butter bites are super customizable, gluten-free, vegan, and absolutely delicious.

  • In a small mixing bowl, combine all of the ingredients and stir to combine thoroughly. Taste and adjust with more vanilla/cinnamon/salt if desired.
    ½ cup (128g) peanut butter, 3 tablespoons (63g) maple syrup, ½ cup (48g) gluten-free rolled oats, ⅓ cup (40g) gluten-free oat flour, ½ teaspoon vanilla extract, ¼ teaspoon cinnamon, ¼ teaspoon salt
  • Scoop into balls (I used this a small cookie scoop) and then roll in between your palms to smooth out the dough balls.
  • Eat immediately, or store in an airtight container in the fridge.
