Dark Chocolate Peanut Butter Truffle Bars
These Dark Chocolate Peanut Butter Truffle Bars are delicious and easy to make. These are the perfect healthier candy bars! They’re gluten-free and grain-free, with a vegan option.

Unsurprisingly, I don’t make dessert recipes from other bakers or bloggers too often, since I’m normally SWIMMING in baked goods of my own over here. But…that certainly doesn’t mean I’m not constantly drooling over all the other blogger’s amazing treats on Instagram.
Liiiike all of the treats that my friend Rachel, who runs the Instagram account RachLMansfield makes – she’s seriously my dessert soul sister. Both named Rachel ✔️ both obsessed with making & eating desserts ✔️ especially with ALL the chocolate and peanut butter ✔️!! She’s also the sweetest and so full of positivity and self-love on her page and her Stories.

She’s only been blogging for a couple of years, but I’ve watched her account explode with growth. I’m always drooling over the treats that she’s making. Holy cow, you guys, no one knows how to do toppings like her.
For instance, she made one of my recipes, too—my Ultimate Gluten-Free Fudge Brownies—and just look how she topped one of the ones she had left. Drool-worthy, right? I want to reach through the screen to grab it.

So, today, I had to share a recipe I’ve been majorly swooning over—dark chocolate peanut butter truffle bars! I love that she made these into bars, but you could totally do truffles, too. I just love the cute little candy bar shapes 🤗 especially once they’re topped with crunchy, salty goodness.
For the most part, I followed her recipe. The only changes I made were to use maple syrup instead of honey (which keeps these vegan). I also added chopped peanuts to the top of some (for crunch) and added flaky sea salt to the top of all of them because you guys KNOW I can’t live without some flaky sea salt-action. You guys MUST try these!

Description
These Dark Chocolate Peanut Butter Truffle Bars are easy to make and SO delicious – these are the perfect healthier candy bar! They’re gluten-free and grain-free with a vegan option. Recipe adapted from RachLMansfield!
Ingredients
- 3/4 cup creamy peanut butter, or your nut butter of choice
- 5 pitted dates
- 3 tablespoons water
- 2 tablespoons maple syrup, Rachel uses Manuka honey – I replaced with maple syrup to keep these vegan
- 1/2 cup coconut flour
- 1 cup (8 ounces) dark chocolate
Instructions

Combine peanut butter, dates, water, maple syrup, and coconut flour in a food processor or blender.

Blend until the ingredients are broken up and fully incorporated.

Line a baking tray or large plate with parchment paper.

Using a spoon or your hands, scoop about 3 tablespoons of dough into your hand, roll it into a ball, and form it into rectangles.

Once all the truffle bars are formed, melt dark chocolate chips on the stove or microwave. I prefer using a smaller bowl for this so the chocolate is deeper and easier to dip.

Using a fork, dip each truffle bar into the chocolate and let the excess chocolate drip into the bowl.

Place the truffle bars on the lined tray and add any toppings you like, like salt or crushed peanuts. Once the truffle bars are covered, place them in the freezer for 1 hour to set.

Keep stored in the fridge in an airtight container for a week or a couple of months in the freezer.

These look delicious. Can you taste the dates? I’m definitely not a date fan but maybe the peanut butter is strong enough to mask them? I’d love to make them soon but am apprehensive…..due to my fussy tastebuds.
Hi Susan, there’s a lit bit of chewy date texture and sweetness, so I wouldn’t say that their flavor disappears, but peanut butter is definitely the predominant flavor here! You could try using just 2-3 dates and adding a tablespoon or two of maple syrup instead :)
Can I store these at room temperature or do they need to be refrigerated?
I would recommend refrigeration for them to last longer but room temp will be fine for a few days.
