here’s what you’ll need —
1½ cup (148g) blanched almond flour
½ cup (72g) arrowroot or tapioca starch
¼ teaspoon sea salt
¼ cup (84g) maple syrup
5 tablespoons (70g) vegan butter, I used unsalted
1 teaspoon pure vanilla extract
½ teaspoon almond extract, optional
Powdered sugar, to roll the cookies in

ingredients —>
• ½ cup (122g) pure pumpkin puree (make sure it’s super smooth)
• 2½ teaspoons pumpkin pie spice, or 1 teaspoon cinnamon, ½ teaspoon ginger, ½ teaspoon nutmeg, & 1/8 teaspoon cloves
• ⅓ cup water
• ½ cup sugar-free maple syrup substitute (I used @wholesomesweet Zero Sugar Maple Syrup)
• 2 teaspoons vanilla extract
• Pinch of salt

this creamy tomato soup battles for my favorite soup recipe — it’s bright, cozy, and so nourishing. 🍅❤️ perfect as the days cool off and the best when scooped with bread or grilled cheese. comment RECIPE for the link in your DMs!

ingredients —
2 tablespoons olive oil
1 medium yellow onion, quartered
4 cloves garlic
2 pounds fresh tomatoes
2 cups low-sodium vegetable broth
½ cup raw cashews, optional, for creaminess
1 teaspoon dried thyme
1 teaspoon dried oregano
Salt & pepper, to taste
1½ cups chickpeas, drained and rinsed

On a baking sheet, drizzle the tomatoes, garlic, and onions with olive oil, S&P at 400°F for 40 mins, until soft.
Blend with the rest of the ingredients, except the chickpeas, until super smooth. Return to the pot to heat and add the chickpeas. Serve w pesto and toast!
