Who else loves oatmeal? 🙋 If you’re here…you’re probably with me on being a vegan oatmeal lover!! Whether it’s warm or cold outside, I love a big, warm bowl of oatmeal topped with all sorts of delicious goodies. Is it just me who thinks the toppings are the best part?
Oatmeal is nutritious, too! Oats are rich in vitamins, minerals, fiber, and antioxidants, which makes oatmeal a true powerhouse breakfast. Studies have also shown that oats can help lower your cholesterol and improve your blood sugar control. Also, they can help with weight loss because they’re so filling!1
Of course, your add-ins and toppings can add even more nutrition…and/or decadence, depending on your mood! :) Many of these vegan oatmeal recipes are on the sweet side, but there are a few savory options thrown in, which make a fabulous savory breakfast option but can also serve as an easy lunch or dinner. - ⅓ cup rolled oats, gluten-free if needed
- 1 medium ripe banana, mashed
- ⅓ cup unsweetened almond milk or other non-dairy milk
- 1 tablespoon cocoa powder
- 1 tablespoon peanut butter
- 1 tablespoon dark chocolate chunks
- 1 tablespoon unsalted peanuts, chopped
- Mash the banana into a small saucepan. Add the oats, almond milk and cocoa powder, and stir to combine.
- Simmer until the milk has absorbed into the oats, about 4 to 6 minutes. Stir frequently to prevent burning.
- Place into a serving bowl. Swirl in peanut butter, and top with chocolate chips and peanuts. Enjoy!
