Ever wanted to make your own gluten-free sourdough bread? Well, you’ve come to the right place! Since I started baking gluten-free sourdough bread in June of 2020, I fell deep into the gluten-free sourdough bread rabbit hole. It is a delicious obsession!
Maybe you’ve made sourdough bread before and need to transition to gluten-free sourdough. Or, you you could already be a gluten-free sourdough bread baker wanting to try new recipes. Perhaps you’re just dipping your toes in the water of sourdough. No matter the case, this post has guidance on how to get started!
What is sourdough?
Sourdough bread is any bread that you leaven with a sourdough starter instead of yeast. Sourdough starter contains naturally occurring yeast that is harnessed from the air and cultivated over time by feeding it flour and water. While it is traditionally made with wheat flour, you can also make it with gluten-free flour!
Is sourdough bread gluten-free?
Although there is a common misconception that traditional wheat sourdough can be gluten-free, that isn’t true. The amount of gluten in sourdough bread is lower when you compare it to regular wheat bread. However, it still has the gluten protein in it, so it would not be safe for someone with celiac, gluten allergy, wheat allergy, or gluten sensitivity.
We can make a variety of gluten-free and wheat-free sourdough bread with a gluten-free sourdough starter, which is you can make with a gluten-free whole grain flour.
Do I need a gluten-free sourdough starter?
Yes! Before you get going on your sourdough journey, you’ll need a gluten-free sourdough starter. This is pretty easy to make with just gluten-free whole grain flour, water, and time!
A healthy, happy starter is what will give you good bread. Without an active, happy starter, your bread will be dense and won’t rise well when it hits the oven. So, make sure to give your sourdough starter the love and attention it deserves before you start on your bread journey!
Can I use a GF flour blend for these recipes?
Each of my sourdough bread recipes will call for a particular flour blend that works well for that particular recipe. If you would like to use a mix that you can pre-make to simplify the baking process, I recommend using my homemade gluten-free bread flour blend.
If you prefer a store-bought blend, I like this multi-flour blend from Vitacost. This blend uses very similar ingredients to the ones my recipe calls for, with no additives or gums.
For the recipes like the cookies, scones, and other non-bread baked goods, I recommend sticking with the flours called for to get the best results.

I have been making your sourdough bread for about a year. Wonderful!! Thank you so much! I’ve been making chocolate chip cinnamon cardamon swirl sourdough bread but I’m very sure if you were to make a recipe for it it would be even better than my winging it had been. Sourdough chocolate and cinnamon is a great combo. Can you come up with some wonderful recipes using those ingredients together? I would really appreciate it!!

Hi, I am wondering how long and what oven temperature to bake gluten free sourdough baguettes if I use the sourdough recipe here and just divide into two loaves and bake on a baguette pan. I have made the sourdough boule using your recipe and it is the absolute best! So delicious! Any help or advise would be much appreciated!

Hi Sharon, you can preheat the oven to about 485 or so and bake on that temp for 10 minutes, and then reduce the heat to 425 for the last 15-20. This helps get good oven spring and a nice brown crust. Steam during the first 10 minutes also helps :) enjoy!!
