One of the best things about food blogging is the community – pretty much any food blogger will tell you that, but it took me way too long to figure out.
I started blogging when I was just sixteen years old, and I always felt like such a baby in the food blogging world that I never really reached out to other bloggers to make friends. Uhhh…such a mistake. As soon as I started chatting with other food bloggers, I realized how much value there is in chatting with other people who do the same thing as you, especially when that thing is done at home by yourself.
Now, I feel like I’m constantly chatting with other food bloggers and turning to those friends for help, to moan and groan about something or other, and for creative inspiration. One of the best things though? Actually getting to meet those friends!
Shadi over at Unicorns in the Kitchen reached out to me after she had been blogging for a few months, wondering if I would want to meet up for coffee to chat about blogging since we were some of the few Seattle food bloggers. We ended up spending hours talking about all things blogging, and subsequently planned a baking day.
I’m always baking by myself, since my friends have long stopped trying to help me out in the kitchen after learning my semi-control freak tendencies. BUT it was so much fun having Shadi over to help brainstorm, bake, and photograph! We made these blondies as well as a totally swoon-worthy skillet cookie that’ll be coming your way soon ;)
After scavenging around in my baking cabinet for what to make, we ended up with a ton of nuts and some coconut on the countertop. My mind immediately went blondies – they’re so simple to make and can handle all the mix-ins we wanted! After these were baked, Shadi and I fervently dug into the plate of them and couldn’t help but get excited about how deliciously they turned out.
The blondies have a brown sugar base, which gives the edges tons of chew and makes the blondies stay super moist and almost fudgy. Coconut, almonds, cashews, and pecans give these bars a ton of texture and flavor – you’ll love the crunch!
Even though I’m all for putting chocolate on everything, these blondies didn’t need any chocolate to make them awesome – they were plenty rich on their own! The drizzle of caramel was totally delicious, but definitely an extra. Whip up a batch of these real quick and you’ll be devouring them within the hour – enjoy!

Nutty Blondies
Ingredients
- ½ cup unsalted butter
- 1 cup brown sugar
- 1 egg, room temperature
- 1 teaspoon vanilla
- 1 cup all-purpose flour
- ½ teaspoon salt
- ¼ cup coconut flakes
- ¼ cup sliced almonds
- ¼ cup cashews, chopped
- ¼ cup pecans, chopped
Instructions
- Preheat oven to 350°F. Line an 8x8" pan with aluminum foil or parchment paper and spray with cooking spray; set aside.
- In a large microwavable bowl, melt the butter in the microwave. Whisk in the brown sugar. Add the egg and vanilla extract and whisk until smooth.
- Add the flour and salt and fold until combined. Add the almonds, cashews, and pecans and fold in. Pour batter into prepared pan, smoothing it lightly with a spatula or offset knife.
- Bake for 18-20 minutes, or until the edges are golden brown. Let cool completely before cutting into 16 squares.

I’ve totally been meaning to make blondies for such a long time and now I have the perfect recipe :) Also, you’re right about the value of the blogging community. It’s definitely something I’m playing catch up with – it can be all too easy to get caught up in what you’re doing and go it alone, which can get pretty lonely!
