It’s a cold winter day – maybe it’s snowing outside, or you can hear the pitter-patter of rain against your roof as you snuggle in your blankets. If you’re lucky, maybe you’re next to a roaring fireplace, too. What would make things better? A hot, cozy drink. Always.

There’s nothing I love more than the feeling of my hands being warmed around a mug by warm cocoa, a tea latte, or a special coffee on a chilly morning or starry night. It perfectly embodies the coziness we all crave during these darker winter months. 

So today, I have three special holiday drinks to share with you. These will make you feel warm and cozy from the inside out, and they’ll make your tastebuds dance with how delicious they are! The three drinks are:

  • Peppermint Mocha
  • London Fog Tea Latte
  • Salted Cashew Hot Chocolate

Are you craving any of them yet?! I could drink them all right now. First – let’s get into what you’ll need…

What you’ll need to make these:

Peppermint Mocha

A classic that never steers me wrong. It’s a classic for a reason! The combination of brewed coffee, chocolate, and peppermint never fails me when I need a warming morning pick-me-up. For this drink, we’ll use the Mushroom Ground Coffee, the Crunchy Mint Dark Chocolate, a little Maple Syrup if you need it, Peppermint Flavor to make things extra pepperminty, and the milk of your choice! I always go for dairy-free milk to keep things vegan :D 

If the “mushroom” part of the Mushroom Ground Coffee scares you, don’t let it! It tastes nothing like mushrooms – it just includes adaptogenic mushrooms, which help support your body and brain. This is my favorite coffee that I use every day. 

London Fog Tea Latte

Oh, the memories this drink brings back! I drank it all the time in college. At my college coffee shop, we called it a Duke of Earl. This tea latte is made with Tao of Tea Organic Earl Grey Tea, one of my favorite types. We make a strong brew of the tea. Then, froth some dairy-free milk with Maple Syrup for sweetness and Vanilla Extract. That’s all you need!

Salted Cashew Hot Chocolate

If I had to pick a favorite…this would probably be it. The cashew butter adds an incredible amount of creamy deliciousness, and the pinch of salt perfectly balanced the rich chocolate and sweetness of the drink. 

To make it, you’ve got some choices. You can blend your milk of choice (I used oat) with Hu Kitchen Salty Dark Chocolate, or you can use a combination of Maple Syrup and Cacao Powder. Along with the chocolate, you’ll add a spoonful of creamy Cashew Butter and a pinch of sea salt. The cashew butter adds this incredible creaminess to the drink, and the salty finish at the end is the perfect touch to keep it from being too sweet & decadent.

For the Peppermint Mocha

For the London Fog Tea Latte

  • 8 oz. dairy-free milk of choice
  • 1 tablespoon Tao of Tea Organic Earl Grey Tea, brewed in 1 cup of hot water. Add more depending on how strong you like your tea – you want it dark and strong for this recipe since it will be diluted with milk
  • 1 teaspoon Vanilla Extract
  • Maple Syrup, to taste, I like about 1 tablespoon

For the Salted Cashew Hot Chocolate


Instructions

For the Peppermint Mocha

  1. Brew your coffee to your desired strength. Pour into the mug.
  2. Heat milk in a milk frother or the microwave. Add the chocolate, peppermint, and maple syrup, and either blend in a blender or combine in the milk frother until completely blended and frothy.
  3. Pour into your mug, garnish with dairy-free whipped cream and/or a candy cane for a festive twist, and serve immediately.

For the London Fog Tea Latte

  1. Brew tea to your desired strength. You want it rather dark and strong since you’ll be diluting the tea with dairy-free milk. Fill half your mug with the tea.
  2. Heat milk in a milk frother or the microwave. Add the vanilla extract and maple syrup, and either blend in a blender or combine in the milk frother until completely blended and frothy.
  3. Pour over the tea and garnish as desired! I kept it simple with a bit of dairy-free whipped cream.

For the Salted Cashew Hot Chocolate

  1. Heat milk in a milk frother or the microwave. Add the chocolate (or maple syrup and cacao powder), cashew butter, and sea salt, and either blend in a blender or combine in the milk frother until completely blended and frothy.
  2. Pour into your mug and serve immediately. Garnish with dairy-free whipped cream, marshmallows, or any other garnishes you’d like!

Notes

You can use any kind of sweetener you like for these drinks, but I love the maple syrup for it’s warm, delicious flavor! Honey or any kind of granulated sugars will also work.
