Happy Friday, friends! Coming at you with some gooey, fudgy brownie bites on this wonderful Friday – these are a really good way to start your weekend.
I guess I’m feeling the chocolate peanut butter love this week, since I just posted these Chocolate Peanut Butter Chia Puddings the other day. But let’s be honest, seeing a lot of chocolate and peanut butter around here isn’t anything new.
These fudgy brownie bites proved to be a darn delicious vessel for chocolate and peanut butter, because they also include a dollop of raspberry jam and more berries on top. Chocolate and peanut butter gets even better (if that’s possible) with the addition of the tangy raspberries.
The brownies themselves are so easy and totally fudgy – I find that gluten-free brownies are usually fudgier than regular…I don’t know why, but I’m not going to complain about it!
Instead of making these in a regular brownie pan, I opted for individual brownie bites, made in a muffin pan. If you wanted regular square brownies though, you could use an 8×8″ pan and just layer or swirl in the fillings – you’ll have to bake a bit longer, though.
I put one layer of brownie on the bottom of the muffin pan, and then topped each with a dollop of peanut butter, and a dollop of raspberry jam. Raspberry is my favorite flavor, but use whichever jam flavor brings you back to childhood :)
The filling is hidden with more brownie batter, and a few raspberries garnish the top. Of course, you can sub in strawberries or blueberries and whatever type of fruit your jam is, so they complement each other.
Once they’re baked, let them cool or serve warm with an extra drizzle of peanut butter on top! These will keep really well in the freezer too, and you can heat them up in the microwave as you want one. So good – enjoy!
