Easy Brie Bites
These Easy Brie Bites have only four ingredients, but make a delicious appetizer that you won’t be able to get enough of! Gooey brie and crunchy smokehouse almonds make this simple appetizer recipe shine.
Raise your hand if you like football! Okay…now raise your hand if you like watching football especially when there are delicious snacky foods around to eat. Hands up? Yeah, me too.
I think most football lovers know that one of the best things on game day, close behind cheering for your favorite team, is filling your tummy with easy-to-eat snacks. The best kinds of snacks are the ones that are so easy, you can make them during a commercial break.
In addition to these Easy Brie Bites, I always make this Sesame Tamari Snack Mix and a snacky sweet like Chocolate Chip Macaroons. You know they’ll be done by the following commercial break.
When appetizers are gone within seconds (doesn’t that happen at your house too??), I don’t like to spend too much time fussing over making them. Thankfully, these Easy Brie Bites couldn’t be easier to make. Just four ingredients, a few minutes of prep time, and a brief stint in the oven to melt the cheese, and these are ready to be devoured.
Just how easy are these to make?!
You’ll start with mini phyllo shells. You can find these in the freezer section of your grocery store, near the pie crust! These make this appetizer so super simple to make. They provide the perfect flaky base for all the goodness your about to put inside the shells.
Into the shells goes a chunk of good brie and a dollop of fig jam. I love the taste of figs with the earthiness of the brie – it’s a great combo. But of course, you could use whatever kind of jam or preserves you want here.
To add some necessary crunch and a bit of smokiness, you’ll sprinkle chopped Blue Diamond Smokehouse Almonds over the brie bites. The smokey flavor and crunch rounded out these Easy Brie Bites and made them even more swoon-worthy! I could seriously snack on these almonds all day long. You’ll be happy to have some left to snack on after whipping up these brie bites.
These will be snatched up quick wherever you serve them, whether it’s pregaming, at halftime, or before a holiday dinner. Just be sure to save a few for yourself :) enjoy!

Description

Ingredients
- 1 package phyllo shells, mine had 15
- Wedge of Brie cheese
- ¼ cup fig preserves
- ¼ cup Blue Diamond Smokehouse almonds, chopped
Instructions
- Preheat oven to 375°F.
- Arrange phyllo cups on a baking sheet. Add a small chunk of brie and a dollop of fig jam (about 1/2 teaspoon) to each phyllo cup. Sprinkle with chopped almonds.
- Bake for 15 minutes until brie is melted. Serve warm.

OK, I have to admit: I pretty much hate watching any kind of sports. One time we got free tickets to a soccer game and I brought a book, haha! I do not mind the snacking though. At all ;) Especially not if the snacks come in such cute and delicious phyllo cups! I love figs and cheese, so these are definitely a must-make!
