I baked mine in a cast iron skillet for two reasons: 1) it’s cute. 2) It contains the oozing, gooey cheese nicely without making a big old mess. Of course, you don’t have to make it in a skillet at all. A parchment-lined baked sheet will do the trick just fine! But if you’ve got a mini skillet, now’s the time to break it out.
Do you leave the rind on for baked brie?
I cut the rind off the top of the brie and left a bit of a border around the edge so things didn’t get too gooey – this is optional, but it makes it a little bit easier to eat. The brie goes into the oven to get melty, and meanwhile, caramel apple things are happening on the stove.
The topping is super simple – apples are sautéed in a pat of butter, and then we add some brown sugar. The sugar melts down with the butter and apple juices and forms an irresistible dark caramel sauce. Once the apples are tender and the sugar is dissolved, you’re golden.
Add in the pecans for some crunch, grab your melty brie from the oven, and add the caramel apple topping all over the top of it. Gooey, melty, cheesy, apple BLISS, am I right?

Caramel Apple Baked Brie is a gooey, scrumptious appetizer that’s perfect for holiday entertaining! This easy recipe has a caramel apple topping piled on top of wheel of melted brie. It only has 5 ingredients and takes 20 minutes from start to finish.
Ingredients
- 1 wheel brie cheese, about 7 oz.
- 1 tablespoon butter
- 1 apple, cored and diced into small cubes
- ⅓ cup brown sugar or coconut sugar
- ½ cup pecans, toasted and roughly chopped (can sub in your favorite nut)
- Apple slices, crackers, and/or baguette slices
Instructions
- Preheat the oven to 350°F.
- If desired, remove the top rind from the brie for easier eating. Place the wheel of brie in a 6-inch cast-iron skillet or on a parchment-lined baking sheet.
- Bake in the oven for 10-15 minutes, or until the brie wheel is gooey.
- While the brie is baking, make the caramel apple topping. Melt the butter in a saucepan over medium heat. Add the diced apples and sugar and stir to combine. Stir frequently for about 5-8 minutes or until the apples are tender and a caramel-like sauce has formed. Stir in the pecans.
- Remove brie from the oven and add the caramel apple topping right on top.
- Serve immediately with apple slices, crackers, baguette slices, or whatever else you’d like!
Notes
- You can substitute coconut sugar or regular brown sugar.
