One of my favorite things about baking is being able to give my baked goods away. Giving people desserts and treats that I create is how I show appreciation, and how I show people I care about them. I say thank you with a batch a cookies, get well soon with a batch of brownies, and constantly make treats just for the ones that I love. As a relatively introverted person in my day to day life, baking is how I connect with people.
It’s something I can get excited about, and it’s something I can talk to people about, and best of all, it’s something that I can share. And during the holidays? I totally have an excuse to make an obscene amount of cookies and candies and baked goods galore, package them up in cute little boxes with bows and ribbons, and send them off to the people who have helped me this year, the people I’m grateful for, and the friends that I care about.
Those of you who follow me on Instagram may have seen this picture of my holiday cookie boxes coming together, surrounded by all their delicious components. The boxes were filled with mini puff pastry palmiers, big soft ginger cookies filled with cookie butter, sprinkled shortbread cookies, magic cookie bars, browned butter shortbread with salted dark chocolate, graham cracker toffee, brownies with peppermint chips, and this delicious, super easy rocky road fudge.
Now, let’s talk about this fudge for a second. It has 5 ingredients, and takes about 5 minutes to put together. That’s it. Then you stick it in the fridge to let it set up, cut, and serve to your friends. Let them think it took you a while, standing over the stove with a candy thermometer. It’ll be our little secret.

The key is a can of sweetened condensed milk. It sweetens things up, and gives just the right amount of creaminess. Paired with butter and chocolate chips, and you’re in business for a rich, creamy, tastes-too-good-to-be-true fudge.
When you fold in marshmallows and Planters Cocoa Almonds, things get even more irresistibly delicious. The Cocoa Almonds on their own are absolutely addictive, and add the most irresistible crunch to this fudge. I found the Cocoa Almonds on the limited edition Planters sleigh display at Walmart (see the picture below!) – they also had flavors like Brittle Nut Medley, Holiday Nut Crunch, and nut mixtures in super cute nut tins. They’d be perfect for gifting along with your baked goods this year. You can also find tons of fun recipes, coupons, and more on Walmart’s Cooking Up Good site.

The marshmallows gives the fudge more volume, adds that nice chewy, fluffy texture we all love from marshmallows. I love the way the sweetness of them tastes with the rich, dark chocolate and crunchy almonds. This batch also makes a ton of fudge – 64 pieces – which makes it perfect for gifting!
One batch of this can be doled out to tons of different people if you’re gifting with some other treats, or it can make the perfect last mint gift to give out to a few people. Best part – it’s so easy, so quick, and so incredibly delicious! This is sure to be a favorite. Enjoy, and happy holidays!


Easy Rocky Road Fudge
Ingredients
- 3 cups semi-sweet chocolate chips
- 1 14 oz can sweetened condensed milk
- 1/4 cup unsalted butter
- 1 cup Planter’s Cocoa Almonds, chopped
- 2 cups mini marshmallows
Instructions
- Over low-medium heat in a medium saucepan, combine butter, sweetened condensed milk, and chocolate chips. Stir frequently until the mixture is completely melted and smooth, about 3-5 minutes.
- Remove from heat. Fold in cocoa almonds and mini marshmallows.
- Pour mixture into a parchment-lined 13x9” pan. Spread evenly. Refrigerate until set before cutting into 64 pieces.
I LOVE rocky road so I LOVE this fudge!!! looks so good!!!! and I feel the same way about sweet treats. . being able to give away my baked goods. I love that you said baking is how you connect with people. . Rocky road is a big deal to me, because it was the first thing that made me like nuts when I was little. Before that, I wouldn’t eat anything that had nuts in it, not even cookies! I love this fudge version : )
