Sweet, tangy, and lightly spiced, this Maple Apple Cider Vinaigrette is an easy 5-minute fall dressing made with apple cider vinegar, maple syrup, Dijon, and warm spices.
In a small bowl or jar, combine the apple cider vinegar, maple syrup, Dijon mustard, garlic, cinnamon, ginger, cayenne if using, salt, and black pepper.
3 tablespoons apple cider vinegar, 2 tablespoons pure maple syrup, 1 tablespoon Dijon mustard, 1 small garlic clove, 1/4 teaspoon ground cinnamon, Pinch of ground ginger, Pinch of cayenne, 1/2 teaspoon fine sea salt, Freshly ground black pepper
Slowly whisk in the olive oil until emulsified, or seal the jar and shake vigorously.

Taste and adjust as needed. The dressing should be bright and tangy with maple sweetness and a subtle warm-spice flavor.
