Ingredients

  • 2 cups pure apple juice or apple cider look for 100% apples, no additives or sweeteners
  • ¼ cup maple syrup
  • 3 cinnamon sticks optional
  • ¼ teaspoon apple pie spice optional and to taste
  • 1 teaspoon vanilla extract optional

Instructions

  • In a small to medium saucepan, combine the apple juice or cider, maple syrup, and/or cinnamon sticks and apple pie spice, if using.
2 cups pure apple juice or apple cider, ¼ cup maple syrup, 3 cinnamon sticks, ¼ teaspoon apple pie spice
  • Bring the mixture to low-medium heat and simmer for 20 to 40 minutes, until reduced to about a third of the original volume. It will thicken as it cools, so don't over-reduce. I was left with about 2/3 cup of syrup.
  • To test for doneness, drip a drop of the mixture onto your counter and let cool for a minute. It should be a little tacky and syrupy, but not too thick and caramel-like.
  • If you accidentally reduce too much, add in a bit more apple juice to thin it out.
  • When it's ready and at the consistency you like, remove the cinnamon sticks and add in the vanilla extract, if using.
    1 teaspoon vanilla extract
  • Pour into your desired bottle and store in the fridge for up to two months. It may last longer than that, but it hasn't been around for long enough for me to test longer than that!
  • Use in drinks (I like adding a tablespoon or two to my homemade chai lattes), drizzle on pancakes and waffles, or on top of oatmeal.
