Easy Pumpkin Oatmeal

This banana-sweetened Easy Pumpkin Oatmeal is made in less than 10 minutes with just 5 ingredients! It's the perfect filling, creamy fall breakfast. It's gluten-free, vegan, and spiced with pumpkin pie spice.

Ingredients

For the oatmeal

  • 1 ripe banana mashed
  • ¼ cup pure pumpkin puree
  • cup gluten-free rolled oats
  • ½ to ⅔ cup dairy-free milk I used almond milk
  • ½ teaspoon pumpkin pie spice
  • Pinch of salt optional but recommended

For the toppings (choose your favorites!)

  • Chocolate chips
  • Pumpkin spice granola butter
  • Almond butter or other favorite nut butter
  • Pecans or other favorite nut
  • Sliced bananas

Instructions

  • In a small saucepan, combine the banana, pumpkin puree, rolled oats, almond milk, pumpkin pie spice, and salt. Simmer until milk has absorbed into the oats, about 5-8 minutes, stirring occasionally.

  • Place the oatmeal into a bowl and top with your desired toppings, letting melt for a minute if you include chocolate chips. Enjoy immediately!

Notes

Want this use this recipe to make overnight oats? Simply stir all the ingredients together and place in a jar or other covered container. Place in the refrigerator to absorb for at least four hours, or overnight.
How to make it in the microwave: Combine all of the ingredients in a microwave-safe bowl and microwave for 2 minutes. Stir, and microwave for another 30 seconds. Let cool slightly before serving.
