This banana-sweetened Easy Pumpkin Oatmeal is made in less than 10 minutes with just 5 ingredients! It’s the perfect filling, creamy fall breakfast. It’s gluten-free, vegan, and spiced with pumpkin pie spice.

For the oatmeal
- 1 ripe banana, mashed
- 1/4 cup pure pumpkin puree
- 1/3 cup gluten-free rolled oats
- 1/2 to 2/3 cup dairy-free milk, I used almond milk
- 1/2 teaspoon pumpkin pie spice
- Pinch of salt, optional but recommended
For the toppings (choose your favorites!)
- Chocolate chips
- Pumpkin spice granola butter
- Almond butter or other favorite nut butter
- Pecans or other favorite nut
- Sliced bananas
Instructions
- In a small saucepan, combine the banana, pumpkin puree, rolled oats, almond milk, pumpkin pie spice, and salt. Simmer until milk has absorbed into the oats, about 5-8 minutes, stirring occasionally.
- Place the oatmeal into a bowl and top with your desired toppings, letting melt for a minute if you include chocolate chips. Enjoy immediately!
Notes
Want this use this recipe to make overnight oats? Simply stir all the ingredients together and place in a jar or other covered container. Place in the refrigerator to absorb for at least four hours, or overnight.
How to make it in the microwave: Combine all of the ingredients in a microwave-safe bowl and microwave for 2 minutes. Stir, and microwave for another 30 seconds. Let cool slightly before serving.
