- 1 cup heirloom cherry tomatoes, halved
- 1 large peach, pitted and cubed
- ½ cup fresh berries of choice, I used blackberries
- ¼ cup toasted pecans, chopped
- ½ fresh lemon
- 2 tablespoons extra virgin olive oil
- Salt & pepper, to taste
- In a bowl, combine the tomatoes, cubes of peach, berries, and pecans. Squeeze the lemon over the top and drizzle with olive oil. Season to taste with salt and pepper. Toss together and serve immediately.
