These Red Velvet Cookie Dough Bites are the perfect quick & easy snack or dessert! These gluten-free, paleo and vegan cookie dough bites are naturally tinted with a healthy superfood powder.

- ½ cup (128g) cashew butter, can also use almond butter
- 3 tablespoons maple syrup
- 1 cup (72g) blanched almond flour
- 1 tablespoon cacao powder
- 2 tablespoons red beet powder, I used MRM Superfoods
- ¼ teaspoon kosher sea salt
- ½ teaspoon vanilla extract
- ⅓ cup chocolate chips, I used Enjoy Life brand
Instructions
- In a mixing bowl, stir together the cashew butter and maple syrup. Stir in the almond flour, cacao powder, red beet powder, salt, vanilla extract, and chocolate chips.
- Roll the dough into 12 balls and store in an airtight container in the refrigerator for up to 2 weeks.
