Description

These Red Velvet Cookie Dough Bites are the perfect quick & easy snack or dessert! These gluten-free, paleo and vegan cookie dough bites are naturally tinted with a healthy superfood powder.


Ingredients

Scale
  • ½ cup (128g) cashew butter, can also use almond butter
  • 3 tablespoons maple syrup
  • 1 cup (72g) blanched almond flour
  • 1 tablespoon cacao powder
  • 2 tablespoons red beet powder, I used MRM Superfoods
  • ¼ teaspoon kosher sea salt
  • ½ teaspoon vanilla extract
  • ⅓ cup chocolate chips, I used Enjoy Life brand

Instructions

  1. In a mixing bowl, stir together the cashew butter and maple syrup. Stir in the almond flour, cacao powder, red beet powder, salt, vanilla extract, and chocolate chips.
  2. Roll the dough into 12 balls and store in an airtight container in the refrigerator for up to 2 weeks.
