Pancakes are probably one of my favorite things to whip up on the weekend for a late breakfast. They’re also perfect to serve for a family or invite friends over for a fun brunch date! 10. Vegan Banana Blueberry Pancakes

For the crust 1 cup pecans 1 cup almond flour 1/4 cup coconut sugar 1/4 cup coconut oil, melted 1/2 teaspoon cinnamon 1/4 teaspoon sea salt For the filling 1 cup raw cashews, soaked in water for 4 hours to soften 1/2 cup coconut cream 3/4 cup vegan coconut yogurt (I use a local one from the farmer’s market, however most store brands will do - just make sure it’s nice and tangy!) 1/4 cup (84g) maple syrup 2 tablespoons lemon juice (from the juice of one lemon) 2 tablespoons arrowroot starch 1/2 teaspoon vanilla extract 1/4 teaspoon vanilla bean powder 1/2 teaspoon salt
