Description

This Easy PB&J Oatmeal is ready in less than 10 minutes and makes a fantastic easy vegan breakfast! We cook the berries with the oats to get a beautiful purple oatmeal that tastes as delicious as it looks. You can also make it as overnight oats or in the microwave. Yields one serving.


Ingredients

For the oatmeal

  • ½ of a small banana, mashed
  • ⅓ cup gluten-free rolled oats
  • ⅔ cup liquid of choiceI used half water and half almond milk
  • ⅓ cup berries of choice, I used blueberries & raspberries

For the toppings

  • Peanut butter
  • Berries of choice
  • Cinnamon

Instructions

  1. In a small saucepan, mash the banana. Add in the oatmeal, berries, and liquid. Simmer until milk has absorbed into the oats, stirring frequently to prevent burning, about 5-8 minutes. While the oats cook, smash the berries slightly as they warm to help them melt into the oats.
  2. When the oats are at your desired consistency and doneness, place them in your serving bowl and top with peanut butter, berries, and cinnamon. Enjoy immediately!

Notes

How to prepare as overnight oats

Combine all of the ingredients and place in a jar or bowl. Cover and refrigerate for at least four hours, or overnight. When you’re ready to serve, stir and add any extra liquid as desired to get to the oatmeal consistency that you prefer. You can heat briefly in the microwave or over the stove if you want warm oats.

How to make in the microwave

Combine all of your oatmeal ingredients in a microwave-safe bowl and stir to combine. Microwave on high for one minute. Stir, and microwave for another 30 seconds if the liquid isn’t absorbed to your liking yet. Let stand for a few minutes to finish absorbing and cool slightly before adding your toppings and digging in.
