These Gluten-Free Peanut Butter Chocolate Cookies are a delicious peanut butter cookie with a chocolate swirl in the center. Dense, rich, and super yummy!I have an addiction. No, it’s not to a drug or alcohol or anything bad like that. My addiction? The Food Network. It’s sad…I could literally spend all day in the kitchen baking with Cupcake Wars, Paula Deen, Guy Fieri and Rachael Ray on in the background and be perfectly content. Something about hearing their great culinary minds bringing about new flavor combinations and using unexpected techniques just continues to inspire my baking. I love just listening to them talk about food. I could watch the Food Network forever.

While I love all the shows, Chopped and Diners, Drive-Ins, and Dives are definitely my guilty pleasures. Seeing all the original things that appear on those shows never fail to impress and inspire me. I know some people are anti-Guy Fieri (something about him being a tool?) but he genuinely entertains me! He definitely is himself and has created quite the name for himself. Sometimes I even catch myself thinking “that’s so money!” Embarrassing, I know.

However, I know for a fact I’m not the only one with a Food Network addiction. In math class the other day, somehow the topic of Triple D came up and me and some friends decided were going to hit up all the Triple D places in San Diego and just some of San Diego’s ridiculously good restaurants. Goodness I am so excited, both for our food tour of San Diego as well as finding some other Food Network junkies. So question: what’s your T.V. guilty pleasure?! Moving on, another obsession of mine is peanut butter. Smooth, creamy, yummy and perfect. I could eat it off of a spoon. Add a bit of chocolate and I’m in bliss. As I said in my caramel corn post, I’ve been dipping my feet into the gluten-free world, so when I saw these gluten-free peanut butter cookies I knew I had to try them. Especially because they only had five ingredients! Talk about an easy cookie. The result? A super peanut-buttery, dense, amazing cookie. Heavenly! If you’re looking for a delicious gluten-free cookie, look no farther. I’m also going to be trying this recipe with some other nut butters, probably almond and walnut specifically! Gluten-Free Peanut Butter Chocolate Cookies

Ingredients

Scale
  • 1 cup peanut butter
  • 1 cup sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • ½ cup chocolate chips

Instructions

  1. Preheat oven to 350 degrees F.
  2. Beat together all ingredients except chocolate chips and make tablespoon-sized balls. Place on an ungreased cookie sheet, flatten slightly, and make a small indentation in the middle of the cookie with your thumb. Bake for 8 minutes.
  3. After removing cookies from the oven, immediately place about 6 chocolate chips in the center of each cookie. Let sit for 2-3 minutes or until chips are shiny. Swirl chocolate in the indentation. Remove from cookie sheet and cool completely.
