I’m very much a maker. I love to create things and make things from scratch, which is where my love of baking derives from. There’s such a feeling of satisfaction from being able to look around the kitchen and see a bunch of things you’ve made (cookies! jam! brownies!). Even though it takes more time, I get so much more out of making something myself than I do from buying it.

This spills over into my home decor too. When I moved into my apartment, I was obsessive about getting my apartment beautifully decorated and accessorized without spending all my money. Harder than it looks, folks – but I ended up DIYing some fun art pieces and knick knacks that now make my apartment look a little bit more fun and personalized. [Read more…]

Let’s talk about life right now, guys. It’s been pretty awesome.

First off, I was slightly nervous going into this summer, living in Washington state for the summer instead of San Diego. Let’s be real: it’s really, really hard to beat a San Diego summer, especially for someone who has always spent their summers there. Perfect weather, beautiful beaches…it’s really summer paradise. So, I was pleasantly surprised with Washington being absolutely beautiful this summer, with only like, 2 days of rain the whole time I’ve been here. It’s so nice! I love being able to hang out by the water and go on walks and just be outside…when I’m not at work, that is. [Read more…]

Yellow Cake with Caramel Buttercream

This Yellow Cake with Caramel Buttercream recipe makes a moist, tender cake that is filled and frosted with a luscious caramel buttercream! This cake is pure, simple, and easy, yet still utterly delicious and impressive. I made it for my Aunt Lori’s birthday. At this point in my baking life, I know the flavor favorites of most of my family and friends. It’s become one of those things that I absolutely love knowing about people because it feels like a little window into their souls. Knowing the right flavors to make them happy makes me feel like I know someone better, or something.

It’s something I try to ask people about, mostly because I’m curious. I love knowing someone’s favorite flavor of frosting, what kind of cake they prefer, and the baked good from childhood that makes them happiest. It’s the little things, and almost everyone has a favorite. Bonus – if I ever feel the need to bake someone a birthday cake, or show a little gratitude, or just feel like spread the baking love, I know what someone will like. No one wants to bring vanilla cake to a party where everyone wants chocolate. [Read more…]

Ben & Jerry. Those boys sure know what they’re doing when it comes to ice cream.

C’mon now – some of those flavors they come up with? Cinnamon Bun, Creme Brulee, Americone Dream, Chunky Monkey, and one of my personal favorites (drumroll please), Chubby Hubby.

Chubby Hubby ice cream is amazing. Described on their website as “Fudge Covered Peanut Butter Filled Pretzels in Vanilla Malt Ice Cream Rippled with Fudge & Peanut Butter”.

Seriously? Flavor perfection. Flavor perfection that I needed to duplicate in some sort of baked good/confection. [Read more…]

It’s so surreal, but I’m already going back to school. It seems like just a few posts ago I was telling you all about my summer plans and how excited I was to be heading back to the sunny San Diego weather. Now, I’m in San Francisco with my dad, road-tripping right back up to Washington.

I’ve had a phenomenal summer, filled with tons of wonderful memories, vacations, friends, family, baking adventures, new experiences, and cakes.

Chocolate week continues!! This recipe has actually already been posted on Bakerita in it’s chocolate almond form.

This recipe came about when my family had some company coming over, so as per usual I was debating about the dessert menu. I just couldn’t decide what to make! My dad requested something chocolate and gluten-free, and I gave him the option of Dark Chocolate Almond Meringue Cookies or Chocolate Fudge Crinkle Cookies. He said he wanted the meringue cookies, but with fresh cherries in them. [Read more…]

These Homemade Funfetti Cupcakes with Vanilla Buttercream are tender, flavorful, and delicious! These are way better than what you'll find in the box.The athletes in the Olympics never cease to amaze me. I’m always dumb-founded by the sheer level of talent, ability and dedication that these people put in. I’m sure part of it is inherent, and that’s not the part I’m jealous of. I’m jealous of the dedication that it takes to spend the hours upon hours spent training in their discipline to become one of the best in the world at what they do.

I can not even begin to imagine how hard they train, how many hours they put in, or what it feels like to win gold for your country. [Read more…]
