These Samoa Bars have a shortbread crust, a layer of toasted coconut caramel, and a dark chocolate drizzle! They're a gluten-free, Paleo, vegan, and guilt-free way to enjoy your favorite Girl Scout cookie. What are your favorite Girl Scout cookies? Mine have always been a strong tie between Thin Mints and Samoas (or Caramel DeLites to some of you). They’re so different that I could never pick a fave and always ended up with both – sometimes with a box of Tagalongs thrown in for good measure.

Samoas have always had one of my favorite ever flavor combinations, though. For someone who absolutely adores shortbread cookies, caramel, chocolate, and toasted coconut in most forms, putting them all together was a genius move. In fact, it was one that was long over due to be replicated in my kitchen. [Read more…]

She’s a total smarty pants, so I know she’ll do great, but I thought I’d make her long nights in the library a little more bearable by shipping her some holiday goodies.

Isn’t the best part of the holidays sharing treats with your family and friends? It’s one of my favorite parts. Paige’s box was packed full of wintery treats: peppermint marshmallows, chai spice pecan brittle, and these chocolate mint shortbread cookies. The cookies are incredible, and it’s hard to eat just one – Paige says they received raving reviews in the library. Stressed out law student approved! [Read more…]

Dark chocolate and flaky sea salt make this shortbread even more irresistible!Fah la laaaa…it’s really is starting to feel like Christmas, isn’t it? Christmas tree farms have officially replaced all of the pumpkin patches, candy canes and peppermint bark are on the shelves of all the grocery stores, and Christmas music is blasting on all of the radio stations. It seriously feels like this year has breezed on past, but I’m ignoring that and focusing on my favorite part of the holidays: the baking part (of course).

Christmas cookie making is absolutely one of my favorite parts of winter and if you think I bake a lot the rest of the year…the cookies seriously  start to get churned out of the kitchen in December. Today my roommate Ally and I went on a big grocery shopping trip and I got a whole bunch of baking ingredients. I mean seriously a lot, as in: I got EIGHT POUNDS OF BUTTER.  [Read more…]

If you’ve been around here before, then it’s probably no surprise to you that I love making cookies and bars. I love making them all year round, so when it finally comes time for holiday baking, I get extra excited because it means everyone else is jumping all in on the baking bandwagon with me – at least for the month.

Every November and December, I fill my kitchen with recipe successes and failures for every type of cookie, candy, and bar I can to share with you the best of what comes out of my kitchen. And then, you have all you need to make the best of my kitchen come out of yours, ready to share with your friends and family for the holidays. [Read more…]

I know, I know…most people don’t use the word “happy” to describe their Monday, but when we’re talking about cookies first thing in the morning, how could it be a bad day?

Since I started working for myself, I don’t mind Mondays. It doesn’t mean going back to school like it used to, but instead it means I get to jump back into my work…and for me, my work is definitely more like fun, so I really can’t complain. [Read more…]

This simple Frozen Lemon Cream Tart with Browned Butter Crust is rich in texture and flavor, and super refreshing on a hot day! You'll love this easy recipe. This crust is seriously one of my favorite things, probably ever. It ranks right up there with peanut butter (as mentioned in my last post) and taking long walks in nice parks and listening to podcasts. If you like browned butter, (and let’s be honest, if you’ve had it, you probably love it) you’ll seriously enjoy this.

This crust is flaky and buttery, with that rich deep flavor that comes from browning the butter slowly. It has a shortbread-like texture that has just the right amount of bite and crumbles into deliciousness as soon as you take a bite. It’s melt-in-your-mouth good. [Read more…]

This Berry Tart is made with a rich Brown Butter Shortbread Crust, and has the berries in the shape of an American flag to celebrate the Fourth of July! It’s July! This is crazy. How has so much time passed?? I can’t believe things are already getting patriotic once again, and red, white and blue everything is already back covering my Pinboards. People are so darn creative with these things, I always have a hard time thinking of a recipe to throw into the ring! I’m so terrible about getting up holiday-relevant posts in time, but I worked extra hard to make sure that I got a Fourth of July post up for you guys. And it’s a GOOD one too.

This crust isn’t new to Bakerita.com, but it’s definitely a throwback to the early days. This Browned Butter Dulce De Leche Tart isn’t photographed the most beautifully, but it tastes amazing. This crust recipe (which actually used to be a cookie recipe when I first found it) makes everything it touches turn into gold…not really, but you know, close. It’s rich and buttery (as all things with brown butter are), and it stays wonderfully crunchy and flavorful under the whipped cream and berries. [Read more…]

These easy Cranberry Crumb Bars are super portable, super delicious, and perfect for your holiday cookie platters! So, I know I’m a little bit late but…Happy New Years!!

I would have said that exactly 9 days ago, but unfortunately my New Year was rung in asleep in my bed (where I had been since 7:30 P.M., thank you very much), with the beginnings of a nasty bout with tonsillitis. It was a rough 8 days, and yesterday, when I was finally able to get out of the house (because I had literally not stepped foot out of the house in 8 days), I was exhausted by 11 A.M., took a two hour nap, and was still in bed at 8:30 P.M.

This recovery thing might take a while.

While I was sick, I couldn’t even do anything. Like at all. I watched TV occasionally, but even that got to be strenuous and I would get turn it off, roll over, and go to sleep so I was unconscious for my misery. [Read more…]
