These Blueberry Muffin Overnight Oats come together in five minutes so breakfast will be ready right when you wake up! This easy overnight oat recipe tastes like blueberry muffins and can be served cool or warm. The past few days have been unseasonably hot here in Seattle, with the temperature cracking the 80s earlier in the week, and it’s luckily stayed in the realm of sundress weather. Being able to photograph on my patio without the need for two jackets and a scarf has been a blessing, and my body is thankful for the extra dose of vitamin D it’s getting from my long daily walks to soak up the sun.

Seattle transforms during the spring and summer, turning from the land of rain and gloom into a sunshine-y, blue skied place with lots of glimmering water and pale locals trying to catch a tan while the sun hangs around ever so briefly. I don’t think summer is here quite yet, as the forecast is predicting a weekend full of rain, but the teases of summer have definitely infected the atmosphere up here. [Read more…]

These Raspberry White Chocolate Oatmeal Cookies are super thick with crisp edges, big chunks of white chocolate and freeze dried raspberries. It’s almost Valentine’s Day! Are you a fan of celebrating Valentine’s Day with lots of over the top lovey dovey stuff, or are you one to keep it more low key? Most people either love the holiday or hate it, but I find myself a little indifferent this year – I’m happily single, glad to spend the day seeing the new movie Single with some of my best friends and devouring something with lots of chocolate.

Whichever way you like to celebrate, I think we can all agree that one of the best parts of Valentine’s Day is spoiling yourself and/or the ones you love with delicious goodies.  [Read more…]

This simple recipe will become a quick favorite for any peanut butter fans. It’s always fun for me to experiment with super unique and different recipes, but sometimes, I just want to make something homey, warm, and comforting. Cookies usually do that for me. The ritual of making cookies always reminds me why I love baking, and it’s even better when you can make the dough with the basics: a bowl and wooden spoon.

I’m constantly using my stand mixer and subsequently doing a whole bunch of dishes, but for this recipe, you can skip it. A little elbow grease is all you need! [Read more…]

Let’s talk about breakfast. Specifically, let’s talk about that fact that the chocolatey bowl of deliciousness you’re seeing above this sentence? Yeah, you can eat that FOR BREAKFAST. Who’s in?

I made this for breakfast for the first time on Monday, again on Tuesday, photographed it (and subsequently devoured) on Wednesday, make it again on Thursday, and then was exceedingly sad on Friday when I was all out of bananas and strawberries. You can say I’m a little obsessed. [Read more…]

These big Peanut Butter Chocolate Chip Caramel Filled Cookies are soft and chewy peanut butter oatmeal cookies studded with chocolate chips, surrounding a chocolate covered caramel! This cookie combines three of my favorite and most used ingredients: peanut butter, chocolate, and caramel. Let’s be honest: anything with those three ingredients makes me pretty darn happy.

And since I’ve spent the past few weeks trying to figure out all of the things that make me happy and how I can incorporate them into my new everyday life, food seemed like a good place to start. Not that food ever makes me unhappy (is that possible?). [Read more…]

This Oatmeal M&M Peanut Butter Skillet Cookie is a quick and easy recipe made in one bowl that's perfect for sharing! It has a layer of peanut butter in the middle and lots of crispy edges. Top it with ice cream for a homemade version of the pizookie! It’s almost the Oscars! How many of the movies have you guys seen? I have seen exactly zero of the movies up for Best Picture, and I think Gone Girl (which was sooo good!) is the only thing I’ve seen from the other nominated movies.

Clearly…I’m not much of a movie watcher. I get way too distracted to sit and watch a movie for as long as it takes, so I’m more of a TV show and YouTube kind of girl, but I do love watching awards shows! It’s so fun to curl up on the couch and watch the red carpet, admire and judge all the different outfits, and see what inevitable dramatic thing happens. What’s your favorite thing about the Oscars? I have some friends who make it a personal mission to see all of the Best Picture nominees before the show so they can make their best predictions. [Read more…]

These Apple Oatmeal Muffins are naturally vegan and absolutely full of apple flavor from sautéed apples, apple cider, and applesauce! These healthier muffins are sure to be a breakfast favorite.Okay, let’s be honest: these muffins sound *yawn* boring. But! Their perfection is in their simplicity, and I mean it when I say these muffins are super addicting, flavorful, and delicious.

I first made these as an excuse to bake for a school project for my social entrepreneurship class. My group and I had to participate in a business plan competition as part of the class, so of course when I heard that people got to vote for the people’s choice award, I knew I had to bake something to help sway people’s votes my way. Salted Peanut Butterscotch Oatmeal Cookies

These Salted Peanut Butterscotch Oatmeal Cookies are studded with roasted peanuts, butterscotch chips, and sprinkled with flaky sea salt! They are a decadent twist on your traditional oatmeal cookie.

These Salted Peanut Oatmeal Butterscotch Cookies are studded with roasted peanuts, butterscotch chips, and sprinkled with flaky sea salt! These cookies are a must have!! #Recipe from Bakerita.comThis cookie has brought together a whole bunch of my favorite flavors and textures. It’s seriously so good. Let’s go over why: 1) Salted, because I’m a firm believer that a sprinkle of high quality flaky sea salt makes any dessert exponentially better, 2) Peanuts…because I love some good crunch in my cookie, and 3) Butterscotch, oh my sweet yumminess, because they’re delicious and add the perfect touch of sweetness.

These things add up to one deeeelicious cookie (or, actually, a few dozen). The inspiration for the recipe came from my kitchen organization, actually. I keep my flours, sugars, oats, and some baking chips in little clear containers stacked on one of our countertops, and I was doing some rearranging…I put my butterscotch chips on top of peanuts, and thought “hmm…those would taste delicious together.” Next to them was the oatmeal container, and voila: Salted Peanut Butterscotch Oatmeal Cookies were born.
