Being able to photograph on my patio without the need for two jackets and a scarf has been a blessing, and my body is thankful for the extra dose of vitamin D it’s getting from my long daily walks to soak up the sun.

Seattle transforms during the spring and summer, turning from the land of rain and gloom into a sunshine-y, blue skied place with lots of glimmering water and pale locals trying to catch a tan while the sun hangs around ever so briefly. Gone is the slow, leisurely pace of summer and back is the hectic, crazy lifestyle that only other college students seem to understand. There is definitely a balancing act that’s involved in college success. Each person needs to find their rhythm – the correct balance of classes, studying, and socializing that works for them.

I also throw baking into that equation, as it’s something that ranks pretty highly on my importance list. I arrived back on campus this past Friday, and since then has been a complete whirlwind of reconnecting with friends and acquaintances, shopping for room necessities and decorating, and the worst – unpacking and organizing. Dark Chocolate Cherry Muffins

This recipe for Dark Chocolate Cherry Muffins have a big dose of dark chocolate, almond extract and fresh cherries for the perfect decadent breakfast!

This is my favorite time of year in San Diego. The weather is absolute perfection (not that the weather here is ever bad), ranging from 73-80 degrees, the sun is constantly shining, the races at the Del Mar Fairgrounds have begun, and the amount of hot surfers you see while driving down the 101 is absolutely ridiculous…sorry freeway, I think I’ll be taking the coast from here on out.

Even better than the sun and the surfers though (um, better? Debatable, but we’ll go with it) is the produce. Farmer’s markets are full of tomatoes, figs, strawberries, raspberries, blueberries, and a plethora of weird fruits and veggies I’ve never ever heard of. Even the strawberries from the grocery store are bursting with sweetness. I’m always overwhelmed by the amount of gorgeous fruits and vegetables this time of year, because I want to bake with them all! However, one of my favorite fruits that comes with summer is cherries. I absolutely love cherries.

Corn Muffins

One of the things I love the most about baking is sharing. Giving out the delectable treats that I create. I love walking into my 2nd period video film class with a plate of salted chocolate chip cookies, or my 4th period math class with a bag full of shortbread bars. As soon as I walk in and people realize I have treats, people begin politely asking “Rachel, can I have one please?”. It starts out kind and nice, but morphs into the same people who’ve already politely asked, walking up and taking as many cookies as their hands can hold. While other people get frustrated at all the people stealing cookies, I have to say, it’s an ego boost.
