Since I tried making my first galette earlier this year, this irresistible chocolate strawberry one, I’ve been having galettes on the mind rather often. A galette, if you’ve never had one before, is essentially a rustic version of a pie or tart. It has a similar flaky crust that’s rolled out, and it can have a fruity or savory filling, but instead of being placed in a pie dish or tart pan, the edges of the pastry dough are folded up and around the filling, forming a freeform kind-of pie.

They’ve all been on the brain for a while, and this summer I’m determined to make them all actually happen. Croissants took about four years to get checked off my food project bucket list and it will definitely not take that long before the next thing on the list gets a big old check mark next to it.

Homemade sourdough made with a starter I made all by myself, homemade kombucha (I’m a little freaked out about the SCOBY though), from-scratch mozzarella, and homemade seasoning salts (I’m kind of a salt dork). These are the perfect snack or soup accompaniment.I’m not a procrastinator. Okay, that’s not true – I procrastinate a little bit, as does everyone, but generally, I’m definitely the kind of girl who gets it done ahead of time. Yet, somehow, I’m sitting here at 8:08 AM, writing a post that was supposed to have gone out at 8. Behind this on my desk top is a cover letter I’m in the middle of writing, a (thankfully) finished case analysis for class today, and a five page draft of a memoir that’s due in one hour and is definitely supposed to be seven pages.

Normally, I would be majorly beating myself about it, filled with anxiety about the standards I’m not meeting. In reality, the “standards” are just really ones I’ve set for myself – and I do think that it is important to set high standards for yourself. For me at least, that’s how I get places. Set a goal, reach it, set another. I’m the same way with my tasks everyday. Sometimes though, like this week, things are just a little too hectic and filled for me to get my hands on everything that needs to get done. Having high expectations can be tough. When you have high expectations, you want the best. I tend to set my expectations pretty high, and I always want things to turn out the best way that they can. So when things I do, or things that happen to me, or things that I make turn out way better than I ever could have hoped, I get pretty jazzed. These past couple of weeks, however, have managed to exceed a lot of expectations.

On Sunday, March 11th, my mom managed to score tickets to a private Katy Perry concert from my aunt. Two of my best friends, Nicole and Paige, and I all got to go and see the concert with about 150 other people. Uh, how cool is that?! Amazingly incredible. She was such a good performer. Her outfits, her hair, her singing, the atmosphere, everything exceeded any expectations I had. I even danced on stage with her. Let’s get this clear: I danced on stage with Katy Perry. Sorry to brag, but it’s one of my prouder moments. I went just being like “okay, this is cool. This is chill.” I left screaming “That was the most amazing thing in the whole entire world. OMG.” Because let’s be real, doesn’t a private Katy Perry concert break most people’s Spring Break expectations?
