These pops, filled with raspberries, are also vegan!In the summer, one of my favorite ways to get my chocolate fix is through a fudgesicle. As a kid and to this day, my mom always has them in the freezer and they’re still one of my favorite snacks to grab when I’m at her house. They’re smooth, creamy, and just chocolatey enough to satisfy any of your chocolate cravings.

I’d always heard that you could make homemade fudgesicles just by freezing chocolate pudding. What?! I’ve always been super curious to try, and curiosity finally got the best of me. I finally gave in and bought a popsicle mold (though you could just as easily make these in paper cups + popsicle sticks).

A new apartment and a new city is finally starting to feel like home, but there is still a bit of nostalgia for the places you’ll never live again. My college house (and college, for that matter) has been left behind and now that summer is coming to a close, classes are starting again. The school year is beginning, and for the first time in my life that I can remember…I’m not starting classes too.

Instead, I’m sitting on my patio at home, sipping coffee and looking at our calming view of the Puget Sound, and enjoying my favorite spot in the house, writing a post to you. Let me just say: Our patio is seriously awesome. Super comfy futon, cute yellow trunk/coffee table, dining set, herb garden, twinkle lights, and flowers – what more could a girl want on her patio?

These Peanut Butter & Jelly Crumb Bars have a layer of PB&J in the middle, surrounded by a crunchy oatmeal crust. The bars are gluten-free, vegan, and refined sugar-free.Let me start with this: these bars are one of my new favorites things. But…the first time I made these bars, I immediately knew I couldn’t post them. They were so hideous, and what was supposed to be a crumbly topping ended up completely melting into the peanut butter layer. I also burned them a little. They looked vaguely like the surface of the moon.

Once I tried them though, I went on a quest to perfect these bars. Despite being unattractive based solely on appearances, these bars were my dream as a peanut butter lover, even burned and ugly. There was no way I could salvage them enough to photograph them so they’d look good enough to post, so the recipe went back to the drawing board.

Lemon meringue pie is a classic during the summer, when the slight tartness of lemon curd and sweetness of meringue is just the dessert you need to break the heat on a summer day. When served cold, it’s totally refreshing.
