Whew, this post has been a long time coming. I posted a picture of these cupcakes on my Instagram what feels like forever ago, and I’ve had people asking me to post the recipe since!

However, I am a college student, and around here, it’s finals season. Unfortunately for both me and all of you, that means baking has been pushed to the back burner to make room for business law, international management, spanish, and economics.

I’ve been baking a lot since I’ve been better. I’ve got time to make up for since I was sick for so long – I only got so much time at home! I’m already going back to school on Tuesday, so I need to have a ton of posts ready to share with you guys.

Pumpkin Cinnamon Rolls

Sometimes I have epiphanies. Often, these epiphanies involve food.

A lot of the time actually. Like, 99.998% of the time. The .002% percent that aren’t about food are typically about how I could shave my dog to get around the “no pets with fur” rule at my school, or some clever excuse as to why I don’t need to go to math. Quality thoughts running through my head. Betcha wish you had mind-reading skills now, dontcha?

Back to epiphanies about food though. This weekend I was feelin’ pumpkin. I bought a can at Whole Foods. For no good reason. Naturally, this sparked my creative juices and VOILA:

Oatmeal Chocolate Chip Cake w/ Cream Cheese Frosting

1 more night. In less than 24 hours, I’ll be living in a new city. I’m officially going to college. I can’t actually say that this reality has hit me yet. All my friends and family have been crying at the changes in all of our lives, but I think I’ve yet to realize the extent to which my life will be different. I’m excited, of course, but I think I’m not going to be fully aware until I’m actually there, in my new room, with new friends, in a new city, new state, and new school. Then, maybe I’ll realize it.

“Black Velvet” Halloween Cupcakes

I. Am. So. Tired.

It’s really ridiculous. I’ve had so much on my plate lately! But so have all the other high school seniors…but they haven’t been catering the desserts for parties, running a website, doing college applications, and been baking for way too many family occasions to count. So maybe I have been doing more than them. But whatever, I like it. Baking makes me happy.
