I’m constantly making and trying new treats, and in addition to what you see, there’s a lot of things that don’t make the site because they’re not good enough. But even with all that does make it here to be shared, certain things tend to stand out.

Obviously, I have my favorites. And considering how damn hungry editing the photos of these macaroons made me? These chocolate chip macaroons are definitely a new favorite. I’m highly considering making another batch of them tonight, but I’m nervous I’ll definitely probably eat the whole batch, way too quickly, which would be highly reminiscent of these last few times I made these. Homemade Coconut Butter has just one ingredient: coconut! It’s easy to make at home in a food processor or high-powdered blender and can be used in TONS of ways – it’s great as a spread on it’s own and can also be used in many different recipes.

Seriously…it has ONE ingredient. It’s less a recipe and more just a post full of me telling you why you should put some unsweetened coconut flakes in your blender or food processor.

And I have a lot of good reasons. See, what happens when you blend up that unsweetened shredded or flaked coconut is that it slowly breaks down into a smooth, luscious coconut butter. It’s similar to coconut oil in that it has a low 77º melting point, and when it’s all melty, it’s a fabulous spread on toast and perfect for drizzling over your bowl of oatmeal or yogurt.  [Read more…]

Samoas have always had one of my favorite ever flavor combinations, though. For someone who absolutely adores shortbread cookies, caramel, chocolate, and toasted coconut in most forms, putting them all together was a genius move.
