I moved to Seattle…and I’m purposefully not looking for a job. As I struggled to figure out what I wanted to do with my life, I was presented with a couple of opportunities that inspired me to choose the less conventional path: working on Bakerita.

It’s sort of hard and scary to be intentionally not trying to find a job after graduating from college, but the temptation and draw of working for myself and doing what I love is inspiring me to take a risk, while I can. I powered through my last finals week of college (stressful), graduated (exciting), had a week of apartment hunting (stressful), went to Sasquatch music festival (crazy fun/exciting/exhausting), had another week of apartment hunting (stressful/exhausting), moved to a new apartment, (exciting/exhausting) and then had four days of furniture shopping and getting settled in.

I go through granola so quickly because I eat it for breakfast, no joke, just about every single morning. My go-to favorite breakfast is Greek yogurt (sometime flavored, sometimes not), berries (whichever ones I have), and a scoop of whatever homemade granola I have at the time. It’s simple, so delicious, and fills me up until lunch.

And eat a lot of them I do! There’s days where apples slathered with a little almond butter replaces meals. It’s the perfect treat, fills me right up, and they’re so delicious.

I cannot get enough of the giant Honeycrisp apples they sell at the grocery store near me, and that’s what I used in this recipe! Honeycrisp’s are my favorite, and I love the slightly tart edge they have. The flavor tasted so succulent with the aromatic spices. Use your favorite apple here though – any kind will be amazing. My birthday, September 16th, always falls within the first few weeks of the school year, and is always my marker of when everything starts feeling a whole lot more like fall. Classes start to get into full swing. The air gets a crisp, chilly edge to it between the sunny days, and the leaves just start to change color around the edges.
