This Easy Rocky Road Fudge is rich, creamy, and comes together in less than 10 minutes with just 5 ingredients! One of my favorite things about baking is being able to give my baked goods away. Giving people desserts and treats that I create is how I show appreciation, and how I show people I care about them. I say thank you with a batch a cookies, get well soon with a batch of brownies, and constantly make treats just for the ones that I love. As a relatively introverted person in my day to day life, baking is how I connect with people.

It’s something I can get excited about, and it’s something I can talk to people about, and best of all, it’s something that I can share. And during the holidays? I totally have an excuse to make an obscene amount of cookies and candies and baked goods galore, package them up in cute little boxes with bows and ribbons, and send them off to the people who have helped me this year, the people I’m grateful for, and the friends that I care about.

Those of you who follow me on Instagram may have seen this picture of my holiday cookie boxes coming together, surrounded by all their delicious components. The boxes were filled with mini puff pastry palmiers, big soft ginger cookies filled with cookie butter, sprinkled shortbread cookies, magic cookie bars, browned butter shortbread with salted dark chocolate, graham cracker toffee, brownies with peppermint chips, and this delicious, super easy rocky road fudge.

Now, let’s talk about this fudge for a second. It has 5 ingredients, and takes about 5 minutes to put together. That’s it. Then you stick it in the fridge to let it set up, cut, and serve to your friends. Let them think it took you a while, standing over the stove with a candy thermometer. It’ll be our little secret.

The key is a can of sweetened condensed milk. It sweetens things up, and gives just the right amount of creaminess. Paired with butter and chocolate chips, and you’re in business for a rich, creamy, tastes-too-good-to-be-true fudge.

When you fold in marshmallows and Planters Cocoa Almonds, things get even more irresistibly delicious. The Cocoa Almonds on their own are absolutely addictive, and add the most irresistible crunch to this fudge. I found the Cocoa Almonds on the limited edition Planters sleigh display at Walmart (see the picture below!) – they also had flavors like Brittle Nut Medley, Holiday Nut Crunch, and nut mixtures in super cute nut tins. They’d be perfect for gifting along with your baked goods this year. You can also find tons of fun recipes, coupons, and more on Walmart’s Cooking Up Good site.

The marshmallows gives the fudge more volume, adds that nice chewy, fluffy texture we all love from marshmallows. I love the way the sweetness of them tastes with the rich, dark chocolate and crunchy almonds. This batch also makes a ton of fudge – 64 pieces – which makes it perfect for gifting!

One batch of this can be doled out to tons of different people if you’re gifting with some other treats, or it can make the perfect last mint gift to give out to a few people. Best part – it’s so easy, so quick, and so incredibly delicious! This is sure to be a favorite. Enjoy, and happy holidays!

Easy Rocky Road Fudge

Yield: 64 pieces

Ingredients

  • 3 cups semi-sweet chocolate chips
  • 1 (14 oz) can sweetened condensed milk
  • 1/4 cup unsalted butter
  • 1 cup Planter’s Cocoa Almonds, chopped
  • 2 cups mini marshmallows

Instructions

  1. Over low-medium heat in a medium saucepan, combine butter, sweetened condensed milk, and chocolate chips. Stir frequently until the mixture is completely melted and smooth, about 3-5 minutes.
  2. Remove from heat. Fold in cocoa almonds and mini marshmallows.
  3. Pour mixture into a parchment-lined 13x9” pan. Spread evenly. Refrigerate until set before cutting into 64 pieces.

I still clearly remember the first time I made challah. It was probably one of my first, if not my first, experience making any sort of yeast bread. I couldn’t have been older than 7 or 8, and I still remember kneading the sticky dough and making a sticky, floury mess all over the kitchen as my sister and I attempted to craft the challah under the guidance of our Hebrew tutor.

A brownie version, full of fudgy chocolate, that would taste amazing warm covered in ice cream and hot fudge.

Oh yeah. This peppermint skillet brownie succeeded with flying colors. To make it all more fun and seasonal, I threw in some Andes peppermint chips and some chopped up Candy Cane Kisses. When most people think of biscotti, those rock hard, often-overlooked cookies that sit on coffee shop counter tops are what most often come to mind. For most of my life, I didn’t know that biscotti could be waaay more delicious than that.

Then I tried making them myself. The result? A beautiful cookie that’s soft and toothsome, with still a little bit of that crunchy bite around the edges.

I first made biscotti way back in the day when I was hired to made dessert goodie bags for a corporate Christmas party – 100 goodie bags meant a whole lot of biscotti coming out of my kitchen! Each bag had 2 biscotti in it, so I spent quite a bit of time making biscotti that year, and since then, I haven’t bought a biscotti since. Cranberries are a symbol of winter. The festive, cheery red color, the sweet sauce (hopefully homemade) that gets slathered all over your Thanksgiving dinner, and the piles of bags of cranberries that you see placed at the front of the produce section of the market, basking in their 15 minutes of fame, until Christmas passes and they’re replaced.

And this year, prepare for cranberry overload, because I’ve been having too much fun playing with cranberries in the kitchen! I’ve always adored the tart, sweet bite that cranberries add to any dessert, and I’ve always fondly remembered how much I loved these browned butter cranberry lime muffins that I made way back when Bakerita was only a few months old.
