Chocolate Date Caramel Tarts (Gluten Free, Vegan, Paleo)

Chocolate Caramel Date Tarts (Gluten-Free, Vegan, Paleo) from Bakerita.com Busy, busy, busy. I really don’t know how else to sum up my life right now.

Of course, I’m having the absolute time of my life, traveling to new and exotic cities every weekend, eating way too much delicious food (if there is such a thing), spending time with my best friends, and completely exhausting myself in the process. But hey, I’m only here for a limited amount of time, and I plan on making the most of it!

The side effect of my busy/exhausted life is far too few posts for you guys, and for that, I repeatedly apologize. I do hope you’re all enjoying my travel posts though! [Read more...]

Toffee Caramel Cheesecake from Bakerita.com

Toffee Caramel Cheesecake

Toffee Caramel Cheesecake from Bakerita.com Phew – finals are done, and I’m finally home as of yesterday afternoon.Typical – the night before I came home, I woke up with the flu, and after an agonizing day traveling with the flu (it sucks and I don’t recommend it), I finally got home and slept from 2 PM until 9 AM this morning. 19 hours of sleep…think I was tired?!

Thankfully though, I woke up feeling so much better, and thank goodness. Now that I’m home, I leave for London in exactly 10 days. I have no idea how time or this semester has gone so damn quickly. Nevertheless, it’s almost the holidays, and I need to share with you an amazing holiday dessert. Really though, it’s a dessert for anytime you need some serious decadence in your life, and if the holidays aren’t the time for that, well then, I don’t know when is. [Read more...]

Yellow Cake with Caramel Buttercream from Bakerita.com

Yellow Cake with Caramel Buttercream

Yellow Cake with Caramel Buttercream from Bakerita.comThis cake is pure, simple, and easy, yet still utterly delicious and impressive. I made it for my Aunt Lori’s birthday. At this point in my baking life, I know the flavor favorites of most of my family and friends. It’s become one of those things that I absolutely love knowing about people because it feels like a little window into their souls. Knowing the right flavors to make them happy makes me feel like I know someone better, or something.

It’s something I try to ask people about, mostly because I’m curious. I love knowing someone’s favorite flavor of frosting, what kind of cake they prefer, and the baked good from childhood that makes them happiest. It’s the little things, and almost everyone has a favorite. Bonus – if I ever feel the need to bake someone a birthday cake, or show a little gratitude, or just feel like spread the baking love, I know what someone will like. No one wants to bring vanilla cake to a party where everyone wants chocolate. [Read more...]

Caramel Apple Crumble (GF) from Bakerita.com

Caramel Apple Crumble (GF)

Caramel Apple Crumble (GF) from Bakerita.com Apple crumble. Oh, man. Apple crumble is possibly my favorite dessert, and for that reason, I don’t make it too often. Most of the dessert I make, I’m able to resist for the most part. I taste, make sure it’s delicious enough to be shared, but I usually try to avoid gorging myself on baked goods because that would be way bad for my health and for my waistline.

Apple crumble, on the other hand, I’m powerless to resist. I just love it. The sweet, spiced apples topped with all that amazing, crunchy, deliciously buttery crumb topping. Everything about it reminds me of fall. Mmm, it’s just the best! [Read more...]

Sweet & Salty Brown Sugar Bars

Sweet & Salty Brown Sugar Bars | Bakerita.com One of the best things about baking, one of the things that makes me love doing it so frequently, is being able to share my baking. Obviously, I can’t eat everything I make or I would be huge, so that means I am constantly sharing my treats with family, friends, coworkers, sorority sisters, and neighbors.

These bars in particular went to the Stanley Steamer workers who happened to be at my house when I was finishing photographing them. The two young men were slightly confused to see my set-up, taking pictures of cookie bars on the table with my big background board all set up. Of course, they asked what I was doing, and after we talked about my blog for a little (and they finished cleaning the carpet), I sent them away with a big plate full of these bars. [Read more...]

Salted Dulce De Leche Cookie Bars

Salted Dulce De Leche Cookie Bars from Bakerita.com I just finished my first homework assignment for my junior year of college. Whaaat?

It feels like it was a couple months ago that I was writing a post about choosing a college. Now I’m halfway done. I know it’s a cliche, but seriously, where has all the time gone?

I have this semester at school, next semester I’ll be studying abroad in London (woohoo!!), and after that, I’ll be a senior. It’s incredibly bizarre and I’m trying to convince myself I’m actually halfway done with my college years. [Read more...]
