They are made with a refined sugar-free + vegan homemade chocolate and sprinkled with flaky sea salt. You may have noticed that recently I’ve been super into making way healthier but still totally delicious versions of my favorite, traditionally unhealthy treats. First, I whipped up these copycat homemade Twix Bars that were made with a super delicious vegan caramel and crispy coconut flour shortbread.

A version of one of my favorite candies made with only six ingredients, and without any refined sugars or gluten? Yes, please! Those first bars have inspired a whole slew of follow-ups.  [Read more…]

This Chai Spice Pecan Brittle is a unique twist on the traditional brittle you see around the holidays - this version features buttery pecans and a bold chai spice blend.

Every year around the holidays, I fall in love with making candy all over again, and wonder why I don’t make candy all of the time. It’s definitely not for everyone – making candy requires patience, precision, and a little bit of love.

It can be awfully finicky – melting sugar doesn’t always want to cooperate, and too often candy ends up undercooked, burned, or crystallized. It’s not that candy making is hard, it’s just that you have to dedicate about 10-20 minutes to doing just that: making candy. [Read more…]

This S'mores Fudge only takes 15 minutes and six ingredients to prep - no baking required! This quick and easy fudge recipe is a no-mess way to enjoy s'mores.Weather in Seattle has not been my friend recently. When I first moved into my apartment I was stoked on my light situation – a living room with an entire glass wall that gets direct light for half the day? Yes, please! In the summer, I struggled with having too much light. I would be blinded by the sun in my eyes as I stood inside taking photos.

Oh, how I miss those days. They are so long gone. Back in summer, I could be taking photos until 5 or 6 PM…now, the light is totally gone for the day by 4 PM at the latest – but that’s not the main problem. The wall of windows that used to let in tons of light now barely lets in any, but that’s cause there is none, except for the occasional hour where the sun will break through the clouds to grace us with it’s presence. Making your own marshmallows is easier than you'd think! These Peppermint Marshmallows look gorgeous, taste 100x better than store bought, and make a great holiday gift. Be sure to save a few to enjoy in your hot cocoa!Today, we’re making marshmallows. Beautiful, pillowy peppermint-flavored marshmallows that have a gorgeous and vivid red swirl on the top of them. They seem hard to make, right? Most people are surprised by the feat of homemade marshmallows, and even more impressed when they sink their teeth into the sweet, pillowy puffs of goodness that are incomparable to their store-bought counterparts.

I tackled homemade marshmallows a while back, and have posted a chocolate malt version and a cake batter version. Every time I make them I wonder why I don’t make them more often. Besides watching for your candy thermometer to reach a certain temperature while you melt down the sugar and waiting a while for the mixture to whip into gorgeous white fluff, this recipe isn’t too difficult. Today I teamed up with some amazing bloggers in honor of an exciting celebration: David from Spiced Blog and his wife Laura are expecting a baby boy! In honor of the baby on the way, Chris from Shared Appetite organized a super manly baby shower to help send David and Laura some delicious blogger love before their little sous chef arrives. Everyone made some delicious things – you can see the full list down below!

I love following David’s blog and seeing how guys can kill it as food bloggers too! I was also super excited to come up with a “manly” treat to share for this virtual baby shower.

These Chocolate Malt Ball Cookies are dense chocolate fudge cookies packed with malted milk powder, chocolate chips, and malt balls. These quick and easy treats will fly off the cookie plate! Sometimes, when life gets too hectic, or demanding, I stop and I reflect and I take a couple deep breaths, and then, when I can, I go bake.

Baking is, and always has been, my form of escape. It’s where my creativity unleashes and I can just get lost in the process of doing.

I’m in a class this semester, Economics of Happiness, and we just read a book called The Geography of Bliss. It follows a man traveling around the world in search of what makes countries some of the happiest, or saddest, places in the world. My biggest personal take away of the book? I want to go to Iceland. [Read more…]

This Easy Rocky Road Fudge is rich, creamy, and comes together in less than 10 minutes with just 5 ingredients! One of my favorite things about baking is being able to give my baked goods away. Giving people desserts and treats that I create is how I show appreciation, and how I show people I care about them. I say thank you with a batch a cookies, get well soon with a batch of brownies, and constantly make treats just for the ones that I love. As a relatively introverted person in my day to day life, baking is how I connect with people.

It’s something I can get excited about, and it’s something I can talk to people about, and best of all, it’s something that I can share. And during the holidays? I totally have an excuse to make an obscene amount of cookies and candies and baked goods galore, package them up in cute little boxes with bows and ribbons, and send them off to the people who have helped me this year, the people I’m grateful for, and the friends that I care about.
