This Easy Rocky Road Fudge is rich, creamy, and comes together in less than 10 minutes with just 5 ingredients! One of my favorite things about baking is being able to give my baked goods away. Giving people desserts and treats that I create is how I show appreciation, and how I show people I care about them. I say thank you with a batch a cookies, get well soon with a batch of brownies, and constantly make treats just for the ones that I love. As a relatively introverted person in my day to day life, baking is how I connect with people.

It’s something I can get excited about, and it’s something I can talk to people about, and best of all, it’s something that I can share. And during the holidays? I totally have an excuse to make an obscene amount of cookies and candies and baked goods galore, package them up in cute little boxes with bows and ribbons, and send them off to the people who have helped me this year, the people I’m grateful for, and the friends that I care about.

This Easy Rocky Road Fudge is rich, creamy, and comes together in less than 10 minutes with just 5 ingredients! Those of you who follow me on Instagram may have seen this picture of my holiday cookie boxes coming together, surrounded by all their delicious components. The boxes were filled with mini puff pastry palmiers, big soft ginger cookies filled with cookie butter, sprinkled shortbread cookies, magic cookie bars, browned butter shortbread with salted dark chocolate, graham cracker toffee, brownies with peppermint chips, and this delicious, super easy rocky road fudge.

Now, let’s talk about this fudge for a second. It has 5 ingredients, and takes about 5 minutes to put together. That’s it. Then you stick it in the fridge to let it set up, cut, and serve to your friends. Let them think it took you a while, standing over the stove with a candy thermometer. It’ll be our little secret.

The key is a can of sweetened condensed milk. It sweetens things up, and gives just the right amount of creaminess. Paired with butter and chocolate chips, and you’re in business for a rich, creamy, tastes-too-good-to-be-true fudge.

When you fold in marshmallows and Planters Cocoa Almonds, things get even more irresistibly delicious. The Cocoa Almonds on their own are absolutely addictive, and add the most irresistible crunch to this fudge. I found the Cocoa Almonds on the limited edition Planters sleigh display at Walmart (see the picture below!) – they also had flavors like Brittle Nut Medley, Holiday Nut Crunch, and nut mixtures in super cute nut tins. They’d be perfect for gifting along with your baked goods this year. You can also find tons of fun recipes, coupons, and more on Walmart’s Cooking Up Good site.

The marshmallows gives the fudge more volume, adds that nice chewy, fluffy texture we all love from marshmallows. I love the way the sweetness of them tastes with the rich, dark chocolate and crunchy almonds. This batch also makes a ton of fudge – 64 pieces – which makes it perfect for gifting!

One batch of this can be doled out to tons of different people if you’re gifting with some other treats, or it can make the perfect last mint gift to give out to a few people. Best part – it’s so easy, so quick, and so incredibly delicious! This is sure to be a favorite. Enjoy, and happy holidays!

Apple Cider Caramel | made with delicious fresh cider for a burst of fall flavors in your mouth! Recipe from bakerita.com

Apple Cider Caramels

Apple Cider Caramel | made with delicious fresh cider for a burst of fall flavors in your mouth! Recipe from bakerita.com There’s something incredibly satisfying about making your own candy. I always feel way more successful after an awesome batch of caramel or toffee than I do about a great batch of cookies – but the truth is, there’s no need for it to feel like an accomplishment, because it’s really not that hard!

(But you should still totally feel great about making these, because they’re awesome and everyone will love ‘em).

As long as you have an accurate candy thermometer, you’re in business. Candy does require a close eye, but only for a few minutes, and it all comes together so quickly that as long as you have all your ingredients put together before you start the recipe, you’ll be golden. [Read more…]

Salted Rosemary Pecan Brittle from Bakerita.com

Salted Rosemary Pecan Brittle

Salted Rosemary Pecan Brittle from Bakerita.com I’m a little…okay, a lot, behind on the holiday gift train. Seriously. 4 days before Christmas? Most of the parties are already over, but I digress. I may be super duper late with this recipe in blogger-world, but if you’re still needing a Christmas gift, a stocking stuffer, or a wonderfully tasty snack for Santa’s platter, or you know, just to snack on while your wrapping presents, this salted rosemary pecan brittle is amazing.

It is different from the typical peanut brittle. That was the original direction I was going with the recipe, but somehow things got away from me and I ended up with a wonderful version of brittle that I know I’m going to be making over and over again. [Read more…]

Sweet & Salty Brown Sugar Bars | Bakerita.com

Sweet & Salty Brown Sugar Bars

Sweet & Salty Brown Sugar Bars | Bakerita.com One of the best things about baking, one of the things that makes me love doing it so frequently, is being able to share my baking. Obviously, I can’t eat everything I make or I would be huge, so that means I am constantly sharing my treats with family, friends, coworkers, sorority sisters, and neighbors.

These bars in particular went to the Stanley Steamer workers who happened to be at my house when I was finishing photographing them. The two young men were slightly confused to see my set-up, taking pictures of cookie bars on the table with my big background board all set up. Of course, they asked what I was doing, and after we talked about my blog for a little (and they finished cleaning the carpet), I sent them away with a big plate full of these bars. [Read more…]

No-Bake Snickers Pie

No-Bake Snickers Pie

No-Bake Snickers Pie, a luscious cheesecake filling that is full of Snickers, peanuts, and dulce de leche! | Bakerita.comLast week, Ally and Mariah, two of my best friends from school, came to San Diego for a few days (and we all went to Newport Beach, and Santa Barbara!) and since I had brought Mariah a dessert made of all of her favorite things, Ally requested a dessert that had all of her favorite things. I know Ally has a major thing for Snickers, cheesecake, chocolate, and caramel (um…who doesn’t?) so I decided I would play off on a combo of all of them.

My mind ment straight to no-bake cheesecake, and my recipe for my Chocolate Peanut Butter Mousse Pie snuck into my head. Since Ally also loves Oreo crusts, I figured this would be absolutely perfect. [Read more…]
