These Pumpkin Cheesecake Brownies are moist + fudgy brownies with a swirled layer of spiced pumpkin cheesecake! These brownies are gluten-free and refined sugar free.Appropriately enough, along with my first pumpkin post of 2016, comes the first rainy + cold autumn days in San Diego. We’ve had beautiful sunny weather pretty much every day since I moved back in June, but Tuesday was miserably grey and rainy all day long.

Eating pumpkin baked goods, making chili, and drinking lots of tea seemed like an appropriate way to spent the first real fall day. In all honestly, as much as I love and appreciate San Diego’s near constantly sunshine, I love a good rainy day and I’m not entirely dreading the start of the cooler seasons, as much as I love summer.

These gluten-free brownies were made for chocolate and peanut butter lovers!Hi, friends! I’m writing to you from thousands of feet in the air, en route from Barcelona to London, where I’ll continue on home to San Diego (on an eleven hour flight- ugh :P). For the past 17 days, I’ve been bouncing from city to city around Europe, and while I thought I would be excited to be back home, I’m already dreaming of the next time I can go back.

If we’re Snapchat friends, you may have seen my story – documenting all the places I’ve seen and all the many, many gelato cones that I’ve eaten. Along with my mom’s whole side of the family (minus my sister – we missed you, Shay!), we started in Athens and then got on a 10-day cruise through Europe, finally ending in one of my favorite cities in the world – Barcelona. Next up: Almond Joy Brownies! I was going to go for straight up copycat Almond Joys, and that will probably happen around here someday, but piling all the goodness of an Almond Joy onto a deliciously rich and fudgy brownie? Well, that sounded like it needed to be made ASAP. [Read more…]

These Chocolate Covered Strawberry Brownies are a swoon-worthy and surprisingly guilt-free treat – they’re gluten-free, refined sugar-free and Paleo!

These Chocolate Covered Strawberry Brownies are a swoon-worthy and surprisingly guilt-free treat - they're gluten-free, refined sugar-free and Paleo!I remember when my sister first asked me to try baking healthier for her. When I was first learning how to bake eight years ago, it pretty well coincided with her discovering her intolerance to gluten. She would come into the kitchen and scoff at me putting 2 cups of sugar and a whole bunch of all-purpose flour into something, begging me to please figure out how to make things delicious without all the sugar and gluten that I normally used, that she couldn’t have.

I heavily resisted for a while. I was convinced that nothing without gluten or sugar could possibly taste good, and I held on to that skepticism for a while. Finally, when my dad decided to try going gluten-free, I acquiesced, realizing the majority of my immediate family now wouldn’t eat the gluten-filled items I’d make. [Read more…]

Since I work from home and tend to be by myself a lot, I pretty much constantly have to be listening to something. I don’t like baking or working in silence, and while I usually have music on, I’ve also become majorly obsessed with podcasts.

I’m the kind of person who sits in front of the TV with my laptop, doing a million other things, just listening to the TV and therefore missing half of whats going on in the show…so podcasts are pretty much the perfect source of entertainment for me because I can get everything that’s going on without actually having to watch anything. I get to listen to transfixing journalists tell investigative stories, or hear food bloggers be interviewed, or hear inspiring words about bettering myself. They help give a little mental stimulation at a time when I’m usually all in my head. [Read more…]

These are the perfect addition to a holiday dessert platter. How do you feel about cranberries? I know for some, it’s not a great relationship, but then there’s the folks who can’t have Thanksgiving without a few big spoonful of cranberry sauce on the plate (I’m looking at you, Pop Pop!).

I’m sort of in between. I don’t love cranberry sauce on my Thanksgiving dinner, but I absolutely love cranberries in baked goods! There’s something about the super tart bite of cranberries and the way it plays with sweet flavors…it’s irresistible as a baker, and especially as someone that loves to put contrasting flavors together.  [Read more…]
