I’m going to be straight up about something – overnight oats are usually not my favorite oat preparation. Maybe a weird confession to come at the beginning of a post convincing you to eat these delicious overnight oats? Yes, but these overnight oats convinced me to be an overnight oats lover, so maybe they’ll be your catalyst too.

I totally understand the positive thought behind overnight oats – we want them to be prepped ahead of time and ready to grab and go in the morning. That’s all good and well, but usually the taste just wasn’t all there for me. They ended up a little bland, sometimes not moist enough, and just sort of *bleh*. [Read more…]

This Peanut Butter Acai Bowl is the perfect creamy, healthy, and peanut buttery breakfast! The recipe makes one thick smoothie bowl, best topped with fresh fruit, granola, and peanut butter.I’ve gotten pretty crazy obsessed with acai bowls and smoothie bowls since I discovered I could make them at home in my Vitamix. They’re the perfect breakfast or mid-day snack, especially in the summertime when you need something to help cool you off.

At my place in Seattle, there was an acai bowl/jar bar place on my street called FIT BAR, and they had the best peanut butter acai bowl called Peanut Butter Power. Not going to lie, guys – this recipe is my copycat of the peanut butter power acai bowl. [Read more…]

This Berry Upside Down Cake highlights the bright flavor of fresh berries and has a layer of cinnamon crumb swirl in the center!Berries are back to being reasonably priced in the grocery stores, and it means I’m stocking up every single time I’m food shopping. I can never get enough of berries, and they’re one of my favorite ingredients to bake with – that’s why probably why I have a TON of berry recipes.

The sweet, tart flavor of berries – particularly blackberries and raspberries – can brighten up any dish, and I knew they would really shine in an upside down cake. My friend Isadora from She Likes Food made a beautiful mixed berry upside down chocolate cake (hers is also gluten-free!) and I couldn’t get it out of my head! I took inspiration from her delicious-sounding cake to create my own berry upside down cake. [Read more…]

Blackberry Peach Scones combine two delicious summer fruits in a light, flaky scone that's perfect for breakfast or as a snack.I’ve been thinking a lot about the things that drive me: the motivation to be better than I currently am as a person, as a baker, as a friend, and as a daughter. The support that I’m lucky to have in spades from the people who care about me and love me, as well as from all of you. The fear that I won’t find my way, that I’ll always have this directionless feeling that will allow me to float in any direction. The words, from everyone around me, but also the words in my head that whisper my deepest dreams that seem too big and scary to acknowledge.

It’s an unsettling place to be. In some ways, my fear that my life could go in so many directions just needs a shifted perspective – that fear is really opportunity. Seizing the opportunity and extracting what I want from it is the hard part. [Read more…]

This Apple Berry Crisp is the perfect fall treat. Baked up in a skillet, the tender apples and sweet berries pair perfectly with the buttery oatmeal pecan crisp topping. | via Bakerita.comI get asked a lot what my favorite dessert is, and while I always hesitate and think about it for a while, the answer always ends up the same: anything with apples in it. I’m a huge sucker for apple desserts, and of all the apple desserts, ones that are piled high with crisp or crumble topping top the list. Add in pecans or oats, and I’m in heaven. Oooh, and with caramel sauce – like my caramel apple crisp? Always a winner.

So…while I definitely can’t make apple crisp frequently for fear of devouring it ALL to myself, it’s the one thing I MUST make every fall. A while back, my housemate Olivia was talking about a crisp her mom made, Bumbleberry Crisp, which was apples mixed all up with a bunch of berries. It sounded amazing, and served as the inspiration for this recipe. [Read more…]

This Berry Tart is made with a rich Brown Butter Shortbread Crust, and has the berries in the shape of an American flag to celebrate the Fourth of July! It’s July! This is crazy. How has so much time passed?? I can’t believe things are already getting patriotic once again, and red, white and blue everything is already back covering my Pinboards. People are so darn creative with these things, I always have a hard time thinking of a recipe to throw into the ring! I’m so terrible about getting up holiday-relevant posts in time, but I worked extra hard to make sure that I got a Fourth of July post up for you guys. And it’s a GOOD one too.

This crust isn’t new to Bakerita.com, but it’s definitely a throwback to the early days. This Browned Butter Dulce De Leche Tart isn’t photographed the most beautifully, but it tastes amazing. This crust recipe (which actually used to be a cookie recipe when I first found it) makes everything it touches turn into gold…not really, but you know, close. It’s rich and buttery (as all things with brown butter are), and it stays wonderfully crunchy and flavorful under the whipped cream and berries. [Read more…]
