My birthday, September 16th, always falls within the first few weeks of the school year, and is always my marker of when everything starts feeling a whole lot more like fall. Classes start to get into full swing. The air gets a crisp, chilly edge to it between the sunny days, and the leaves just start to change color around the edges. My friend Ally and I were hanging out in our backyard, lounging in the sun on our (super awesome) swing bench, brainstorming baking ideas for me, when this idea was born. I thought of the dulce de leche I had sitting in the cabinet, and wanted to pair it with some thing fruity that was still in season, but berries + dulce de leche seemed like a weird combo. My goodness, how many times have I wanted to grab a spoon dig into whatever just came out of the oven, but not done it, because I knew I had to let it cool, and then take pictures, before I could have a bite? I looove making bar cookies. They’re so easy, with endless possibilities. They’re portable, delicious, and can either go chocolate-y and rich, fruity and light, or totally caramel-y. I love how I can whip up a batter or a dough, usually a one step process, and throw it all into a parchment-lined pan to bake. No mess, no hassle, no cookie scoop. It makes like so much easier.

Cranberry Crumb Bars | These easy bars are sweet, tart, and delicious! (From Bakerita.com) So, I know I’m a little bit late but…Happy New Years!!

I would have said that exactly 9 days ago, but unfortunately my New Year was rung in asleep in my bed (where I had been since 7:30 P.M., thank you very much), with the beginnings of a nasty bout with tonsillitis. It was a rough 8 days, and yesterday, when I was finally able to get out of the house (because I had literally not stepped foot out of the house in 8 days), I was exhausted by 11 A.M., took a two hour nap, and was still in bed at 8:30 P.M.

This recovery thing might take a while.

While I was sick, I couldn’t even do anything. Like at all. I watched TV occasionally, but even that got to be strenuous and I would get turn it off, roll over, and go to sleep so I was unconscious for my misery. [Read more...]
