I keep feeling like I’m finally going be settled, but it’s taking a lot longer than expected. Having a messy, unpacked house is not good for my focus, and I just need to organize the whole darn apartment before I can truly focus.

I go through granola so quickly because I eat it for breakfast, no joke, just about every single morning. My go-to favorite breakfast is Greek yogurt (sometime flavored, sometimes not), berries (whichever ones I have), and a scoop of whatever homemade granola I have at the time. It’s simple, so delicious, and fills me up until lunch.

I love the sweetness and bold flavor that ripe bananas bring to a baked good, and it’s seriously hard to make a dry banana bread or cake.

I, personally, am a huge fan of chocolate and banana, but for this banana crumb cake recipe, I resisted the urge to add chocolate and kept it pure, with the only adornment being the gorgeous crumbles on top. In a house of six girls, we all tend to get confused about whose bananas are whose and end up with a pile of brown bananas waiting to be a) used in a baked good or b) thrown away. I try to use them up as much as possible so we’re not wasters, and I’m realizing that bananas taste darn good in waaay more baked goods than just banana bread.

Case in point: banana nut bars with brown sugar frosting. These are no regular banana nut bars – these are fudgy and dense and full of delicious banana flavor. They have a healthy dose of cinnamon and nutmeg because I’m all about fall spices right now, and I love the added warmth the spices bring to the bars. The nuts add the crunchiness that I love and crave in most baked goods, but obviously if you’re anti nuts in your baked goods, feel free to leave ’em out.
