But…I want to do that less than I want to sleep.

Cranberry Crumb Bars | These easy bars are sweet, tart, and delicious! (From Bakerita.com)So, I know I’m a little bit late but…Happy New Years!!

I would have said that exactly 9 days ago, but unfortunately my New Year was rung in asleep in my bed (where I had been since 7:30 P.M., thank you very much), with the beginnings of a nasty bout with tonsillitis. It was a rough 8 days, and yesterday, when I was finally able to get out of the house (because I had literally not stepped foot out of the house in 8 days), I was exhausted by 11 A.M., took a two hour nap, and was still in bed at 8:30 P.M.

This recovery thing might take a while.

While I was sick, I couldn’t even do anything. Like at all. I watched TV occasionally, but even that got to be strenuous and I would get turn it off, roll over, and go to sleep so I was unconscious for my misery. [Read more...]

I’ve been meaning to write this post all week, but somehow, school has managed to provide a slew of distractions that kept it from happening. This week was chockfull of tests, quizzes, projects, and various other (useless) assignments that kept me from getting anything besides school done. However, there is a light at the end of the tunnel.

I’m currently sitting in SeaTac airport, waiting to board my flight to Barcelona!

Lemon Poppy Seed Cookies

I don’t even really like lemon desserts. Lemon bars are good, but I’ll almost always pass over a lemon cake (except for this one…when paired with strawberry, I’m in) in favor of something with peanut butter, chocolate, or caramel. I’m more of a fan of lemon in savory applications. Chicken picatta, lemon juice in my salad dressing, and especially Lemon Ricotta Ravioli are some of my favorite lemony applications.

However, for some reason last night when I was in the pantry examining the shelves for inspiration, I looked down at that HUGE box of lemons (I’m really going to need to share a picture of that box…you don’t understand how many lemons we have) and just really wanted a lemon poppy-seed muffin. I also really didn’t want to make muffins.

This post is going to be short and sweet. I'm about to head out to the beautiful Balboa Island to reunite with my best friends from school, who I miss so much! I can't wait to see all their beautiful faces and spend the night catching up…but I figured I couldn't leave without sharing these amazing bars I made recently.

Sometimes, when I go to Costco, I overbuy. I see like six pounds of strawberries for $10 and need to buy them. Six pints of raspberries for $8? Sign me up! A clamshell of blackberries? I'm in. Problem is…I end up with more berries, cherries, and fruit than I know what to do with. So what do I do? Make tons of baked goods that are full of fresh fruit, which doesn't turn out bad for anyone. Dark Chocolate Almond Meringue Cookies (GF)

Dark chocolate. Almonds. Crispy. Chewy. Melt-in-your-mouth. Rich. Light. Fudgy. Somehow, all these words perfectly describe this cookie. It’s an experience in and of itself. It’s naturally gluten-free, no substitutions needed to be made. This is just how it is supposed to be, and it’s glorious.

I was first introduced to this sort of cookie when I was working at Claire’s on Cedros, in the bakery. Claire used to make a recipe super similar to this, but she used powdered sugar, and cocoa powder, I think. To be honest, I don’t completely remember the recipe, even though I used to make them, but those cookies were darn good and had always been one of my favorite treats from the bakery. [Read more...]
